Mom’s 1940's Meatloaf

1 egg
2 tsp salt
3/4 cup chopped celery
1 finely chopped onion (I grate it)
1 tsp sage
1 pkg. dry onion soup mix
1 Tbsp chopped parsley (I used dried)
1/4 cup ketchup, plus more for top
1 can cream of mushroom or celery soup
2 lbs ground meat (1 1/2 lbs lean beef and 1/2 lb lean pork)
3 cups Bran Flakes cereal, slightly crushed

Blend all ingredients adding meat and cereal flakes last. Pack into a 9x5x3 loaf pan shaping into loaf. Spread top with ketchup. Bake at 375ºF for about an hour and a half. If top starts to get dark cover lightly with foil to prevent burning.

Mama's Cheesy Meatloaf

1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)

Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.

Sauce:
1 cup ketchup
1/2 cup mustard
1/2 cup brown sugar

Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze

If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8

Brown Sugar - Ketchup Glaze
1/2 cup ketchup or chili sauce
4 Tbsp.s brown sugar
4 Tbsp.s cider vinegar or white vinegar

Meat Loaf
2 tsp. vegetable oil
1 medium onion , chopped medium
2 medium cloves of garlic , minced
2 large eggs
½ tsp. dried thyme
1 tsp. table salt
½ tsp. ground black pepper
2 tsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 tsp. hot pepper sauce
½ cup whole milk or plain yogurt
1 pound ground chuck
½ pound ground pork
½ pound ground veal
2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
1/3 cup fresh parsley leaf , minced
8-12 slices bacon

1. For the glaze: Mix all ingredients in small saucepan; set aside.

2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; sauté until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.

3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)

4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .

5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

These are good too. You can make it in a big loaf, but the muffin cups make it a quick-fix.

Meatloaf Muffins w/ BBQ Sauce

1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil

Preheat oven to 450ºF. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil, including top surface. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.

My favorite meatloaf recipe comes from Alton Brown of the Food Network's "Good Eats." The following is the recipe from the website. I think there is a little too much spice in it. I pull back on the hot stuff a little.

Good Eats Meat Loaf Recipe courtesy of Alton Brown

Recipe Summary
Yield: 4 servings

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoons kosher salt
1 egg

For the glaze:
1/2 cup catsup
1 tablespoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey


Heat oven to 325 degrees F.

In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

I've never liked the tomato sauce that's on meatloaf but I have to admit this is pretty darn good. Straight forward and yummy!

1 1/2 lbs ground beef (ground shoulder roast is good)
1 slice bread, broken or chopped finely
1 whole fresh egg
1 small vidalia onions or type sweet onion, finely chopped
1 teaspoon table salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup sweet milk or half-and-half

Sauce
4 tablespoons apple cider vinegar
2-4 tablespoons dark brown sugar, packed firm (to taste)
1/2 cup ketchup

Meatloaf: Combine meat loaf ingredients and place into a loaf baking dish.
Smooth out top.

Sauce: Combine sauce ingredients and pour on top and sides of meatloaf.
Bake@ 350 degrees about 1 hour to 1 hour 15 minutes or until done.

ENJOY!
*The addition of 1 or 2 teaspoons of Kitchen Bouquet® makes this recipe very good.
**Recipe should be"plump" from the addition of the milk or Half& Half.
It should NOT be runny.
***A second batch of sauce served hot is good to serve with the meatloaf.

Beefy Mushroom Meatloaf


Make this flavorful mushroom meatloaf with your choice of beefy mushroom or golden mushroom soup, and feel free to use more ground beef or ground veal in place of the ground pork.
INGREDIENTS:
4 ounces mushrooms, chopped
2 teaspoons butter
1 1/2 pounds lean ground beef
1/2 pound ground pork, or more ground beef
1/2 medium onion, finely chopped onion
1 can (10 1/2 ounces) beefy mushroom soup
1/2 cup fine dry bread crumbs
2/3 cup quick cooking rolled oats
1 egg, lightly beaten
1/4 teaspoon pepper
PREPARATION:
Saute mushrooms in butter over medium-low heat until browned and tender. In a large bowl, combine mushrooms and remaining ingredients, mixing lightly until thoroughly blended. Spray a 7x11-inch or 9x13-inch baking dish with cooking spray.


Fashion a rack with a piece of foil and place in the baking dish (this will keep the meat loaf out of the drippings). Place the meat mixture on the "rack" dish and pat into a loaf shape. Bake at 350° for 1 hour and 15 minutes to 1 1/2 hours. Let stand for 15 minutes before serving.
Serves 6 to 8.

and easy meatloaf reciepe i have used is the following; ground beef amount determined in how many you want to feed ie 2lbs about 4to5 servings. oatmeal or bread crumbs 2 eggs a splash of milk if desired and get lipton dry onion soup for this amount 2lbs use 1 package of the soup add to the other ingredients mixed well;,you, if desired add ketchup or a flavored 6oz can of tomato sauce. save ketchup or tomato sauce and spread some on top of meat, if desired place bacon onto and bake for about 1 hour at 350 degrees, drain fat from meatloaf(if needed) served from the pan or a serving platter.

Amish Meatloaf

2 pounds ground beef
2 1/2 cups crushed butter-flavored crackers
1 small onion, chopped
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
2 slices bacon

1 cup ketchup
2 tablespoons vinegar
3/4 teaspoon salt, or to taste
2 tablespoons prepared yellow mustard
1/2 cup brown sugar

DIRECTIONS:
Preheat the oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9x5 inch loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining 1 cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.

Little Cranberry Meat loaves

1 lb. Ground beef
1 c cooked rice
1/2 c tomato juice
1 slightly beaten egg
1/4 c minced onion
1 Tbsp. Kitchen Bouquet
1-1/2 tsp. salt
1 can (1 lb.) whole cranberry sauce
1/3 c brown sugar
1 Tbsp. Lemon juice


Directions:
Combine meat with rice, tomato juice, egg, minced onion, kitchen bouquet and salt. Mix thoroughly. Shape into 5 individual loaves. Place in 13 x 9 x 2 baking pan.

For topping, combine cranberry sauce, brown sugar, and lemon juice. Spoon over loaves.

Bake in moderate oven, 350 degrees, for 40 minutes. Remove to serving platter. Pour sauce over loaves.

This one is a hit everytime I make it.

Ground beef,
chopped onions,
one clove chopped garlic,
one egg,
one cup italian bread crumbs,
1/4 cup milk,
1 tsp basil,
1 tsp garlic powder, and
1 cup applesauce, after mixing together if still a little too moist add a little more bread crumbs.
Form into a glass baking dish (sort of deep) and spread ketchup all over the top of it. Bake 350 for 1 hour and 15 minutes.

I just made this last night! My fiance never liked meatloaf but now he loves mine :) he had seconds!! Here is what I did

350 oven for 1 hour

1 pound of lean ground beef
1/2 pound of breakfast sausage
2 eggs
1/4 cup of milk
2 pieces of bread, toasted and crumbled
1/2 yellow onion diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
2 tablespoons Worschester Sauce
2 tablespoons of brown sugar

topped with BBQ sauce, bake, add more sauce...YUM simple and gooood

a pound of hamburger an onion diced fine, green pepper diced fine, a small can of tomatoe paste salt pepper garlic salt [all measured at your own opinion]
mix all together with your hands for prolly a good ten minutes then place in oven for an hour or two and coat the top with tomato paste as well about 20 minutes before finished....helps make it nice and xcrusty flavored!!
