INGREDIENTS:
•1 1/2 pounds mincemeat
•1 egg, lightly beaten
•1 cup quick cooking oats
•6 1/2 ounces evaporated milk
•1 teaspoon salt
•1/4 teaspoon pepper

•1 tablespoon chili powder
•1/2 cup chopped onion
•1 cup ketchup
•1/4 teaspoon minced garlic
•1 cup brown sugar
•1/4 cup chopped onion

METHOD:
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
2.In a bowl, mix beef, egg, oats, evaporated milk, salt, pepper, garlic powder, chili powder, and 1/2 cup onion. Form into 1 1/2 inch balls and arrange in a single layer in the baking dish.
3.In a separate bowl, mix ketchup, garlic, sugar, 1/4 cup onion. Pour evenly over the meatballs.
4.Bake uncovered 1 hour in the preheated oven.

Meatballs in Chipotle Sauce
Makes 6 servings
Ingredients:
Meatballs:
1/2 pound finely ground beef
1/2 pound finely ground pork
1/3 cup finely chopped onions
2 tablespoons flour
1 tablespoon fresh minced cilantro
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1 egg, beaten
3 tablespoons vegetable oil
Sauce:
1 tablespoon vegetable oil
1 chopped onion
2 garlic cloves, minced
1 cup tomato sauce
2 chipotle peppers, canned in adobo sauce, stemmed and chopped
2 tablespoons chipotle sauce (from canned chilies)
1/2 cup beef broth
Preparation:
Meatballs:
Combine all the meatball ingredients, except the oil, and mix well. Form into 1 1/2-inch meatballs. Brown the meatballs in the oil, remove and keep warm.
Sauce:
To make the sauce, add the oil to the pan and sauté the onion and garlic until soft. Add the remaining sauce ingredients, bring to a boil, reduce the heat and simmer for 15 to 20 minutes until the sauce is thickened.
Place the sauce in a blender or food processor and purée until smooth. Return the sauce to the pan, add the meatballs, and heat through

Ingredients

1 lb Ground Beef
1/4 c Onion; Chopped, 1 Sm.
1/4 c Milk
1/8 ts Pepper

1/3 c Bread Crumbs; Dry

Instructions
Mix all the ingredients together. Shape mixture by Tablespoonfuls into 1 1/2-inch balls. (For ease in shaping the meatball, occasionally wet your hands with cold water.) TO COOK IN A SKILLET: Heat 1 Tbls salad oil in a large skillet, cook the meatballs over medium heat until brown, about 20 minutes. Drain off excess fat. TO COOK IN THE OVEN: Place the meatballs in a lightly greased baking pan 13 X 9 X 2 or 15 1/2 X 9 1/2 X 1-inch; bake, uncovered, in a 400 degree F. oven until light brown, about 20 minutes. Drain off the excess fat.

Baked Meatballs:
Make these ahead, then freeze them for superfast meatballs anytime. They're also great as appetizers and in sandwiches.
1 1/2 pounds ground beef
1 large egg, lightly beaten
3/4 cup quick-cooking oats, uncooked
3/4 cup milk
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 1/2 teaspoons paprika
1/2 teaspoon salt
Combine first 7 ingredients; shape into 1-inch balls.
Combine all-purpose flour, paprika, and salt. Gently roll meatballs in flour mixture, and place on a lightly greased rack in a foil-lined 13- x 9-inch pan.
Bake at 400° for 25 to 30 minutes. Drain on paper towels. Serve with your favorite sauce.
NOTE: To freeze, cool completely, and seal in an airtight container. To serve, place in a single layer on a baking sheet; bake at 400° for 10 to 15 minutes.
Yield: Makes 4 dozen

Old-Fashioned Meatball Stew
INGREDIENTS:
2 tablespoons minced dried onion
1/2 cup fine dry bread crumbs, plain or seasoned
1 teaspoon Worcestershire sauce
2 eggs, lightly beaten
salt and pepper, about 1/4 tsp. each, or to taste
1 1/2 to 2 lbs ground beef
2 tablespoons vegetable oil
4 to 5 medium red potatoes, peeled and cubed
1 or 2 carrots, sliced about 1/2-inch thick
2 ribs celery, chopped, or 1 1/2 tablespoons dried celery flakes
1 medium onion, chopped coarsely
1 can (10oz) cream of mushroom soup (can use Healthy Request or other low-fat)
1 can (10oz) tomato soup
PREPARATION:
Mix eggs with dried onion, bread crumbs, Worcester sauce, and salt and pepper. Blend meat in and mix thoroughly. Heat oil over medium-high heat in a large skillet. Form meat mixture into meatballs about 1 1/2 to 2 inches in diameter; brown on all sides in hot oil.
While meatballs are browning, place the potatoes, carrots, and celery in a Crock Pot (3 1/2-quart or larger). Using a slotted spoon or spatula, place browned meatballs on the vegetables. Quickly brown the onions and add to the Crock Pot. Pour soups over all; cover and cook on low for 7 to 9 hours (3 1/2 to 5 on high). Taste and adjust seasonings before serving.
Serves 4 to 6.

Get a pack of hamburger meat, add 2 eggs and 1/4 cup of Progresso breadcrumbs (for each pound of meat). Roll into meatballs. For the sauce get a 18 oz. jar of grape jelly, and a 12 oz. jar of Heinz chili sauce. That's how you make sweet meatballs.

Thai-Style Meatballs
1 pound ground turkey
1/2 medium onion, finely diced
1/2 cup cilantro, finely chopped
1 Tbsp. ginger, finely chopped
2-3 garlic cloves, finely chopped
1 Tbsp. fish sauce
1 tsp. chili flakes (more or less to taste)
1 egg
1/2 cup Panko (Japanese bread crumbs)
Dipping Sauce
1/2 cup soy sauce
1/2 cup seasoned rice wine vinegar
1 tsp. sriracha chili sauce (optional)
Preheat oven to 375. Mix all meatball ingredients together. Form into 1-2 inch-size balls. Bake in oven until cooked through, about 15 minutes.
Dip meatballs in sauce and enjoy!

Hawaiian Meatballs
~Meatballs~
1 pound ground burger
1/2 teaspoon salt
1/4 teaspoon ginger
Mix together and form into balls and dip into a mixture of 1 egg and 1 teaspoon water. Then dip into flour. Saute in vegetable oil until brown and done.
~Hawaiian Sauce~
1 (16-oz) can pineapple chunks
1/4 cup brown sugar
2 TBS cornstarch
1/4 cup vinegar
2 TBS soy sauce
1 green and 1 yellow bell pepper, cut into strips
Drain pineapple and add water to syrup to make 1 cup.
After removing meat balls from pan, add syrup to drippings, stir in brown sugar mixed with cornstarch, vinegar and soy sauce.
Heat and stir until thickened. Return meatballs to sauce and then peppers and pineapple, stirring to coat. Cover and simmer 10 minutes.
Keep in crockpot on low to medium and stir often. Serve over rice or with long toothpicks as a fingerfood.
You could also use premade or frozen meatballs for this recipe.

Swedish Meatballs in Sauce
1 (1 lb.) pkg. frozen plain meatballs (not the Italian kind)
1 can cream of mushroom soup
1 can French onion bouillon (or 1 cup beef bouillon)
1 cup sour cream
1 tsp. Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
Cracked black pepper
Mix sauce ingredients together and mix in meatballs. Cook on low until heated through. Serve with noodles or rice.

Hi babe,
This is my favourite recipe.
Mince 1 onion & cook in a spoonful of oil on low heat to soften & allow to cool
make crumbs from 2 slices of bread(don't buy breadcrumbs!)
mix onion & crumbs into 400g minced lamb or beef
with one egg, seasoning & herbs
shape into 16 balls and place on plate lined with parchment or clingfilm, cover & refrigerate for at least 30 minutes- this helps them keep their shape.
Delicious fried, grilled/broiled or baked-only take 10 mins
I just made some today with organic minced lamb with oregano- delicious!
