It's because in order to get a good grip on the lid, you are probably having to squeeze the plastic tub too much, building up pressure for when it opens. Try holding the rim of the tub.

because when yogurt is packed, it is packed with the air removed andd compressed - so creating a sort of vaccuum between the yogurt and the layer, this helps to keep it fresh and prevent it from becoming sour easily.
when you tear the layer, it splatters as the air escapes.
the only way is be gentle and rip the label slowly allowing time for the air to enter. keep the side that is being opened away from you to avoid it being splashed on your clothes

Because you are opening it with your elbows instead of your hands?
And if my attempt at wit doesnt get me 10pts, try placing it on a table or bench so you dont have to hold it so tightly, and hold it by the hard plastic at the top.
Simple solutions for complex problems!

it doesn't - put it down on a table and peel the lid back slowly, make sure the plastic cup part is at the bottom...
maybe they should have instructions, other than "peel here", and an arrow...
