It depends on the time of the year, and what holidays are around. I see most are saying Friday or Monday which is true for extended weekends. If it is around a holiday, then the days before and after are the ones missed. For example, Thanksgiving. The Wednesday before Thanksgiving is a ghost town at school. Hence, most schools were giving that day off as well, but the parents then took the children out Tuesday as well. It is a no win situation.
I would go with the extended weekend idea, but probably more Fridays are missed than Mondays from my experience in this area.

Monday or Friday cause they are at the beginning or the end of the week but for some students they just dont care so they can be absent any day

College students tend to cut class on Friday's, generally to get an early start on the weekend one would presume. At least this was true at the University of Houston a couple years ago.
