i recently went to lanzarote for my holiday and they served steak with a roquefort cheese dressing it was divine and i really want to know how to make it. i havnt seen it in any supermarkets already made please help!!

Steaks With Roquefort Sauce

"This recipe came to me when I was doing a Spanish themed party for a Hemingway book. Everyone LOVED the sauce so much I try to make it all the time. However, if you don't like bleu cheese, I wouldn't try it. I also substitute whiskey for the brandy, or any liquor that isn't sweet."

INGREDIENTS:
2 tablespoons butter
1 tablespoon olive oil
4 (5 ounce) beef sirloin steaks
salt and coarsely ground black pepper to taste
2 tablespoons brandy
1 cup heavy cream
3 ounces Roquefort cheese, crumbled
Italian flat leaf parsley, for garnish

DIRECTIONS:
Melt the butter and heat the oil in a skillet over high heat. Season steaks with salt and pepper, and quickly sear on both sides. Reduce heat to medium, and continue cooking steaks 5 minutes on each side, or to desired doneness. Remove from skillet and keep warm.
Pour brandy into the skillet and stir to loosen browned bits from bottom. Stir in cream, and return to a boil. Cook and stir until sauce is thick enough to coat the back of a spoon. Mix cheese into the sauce until melted. Pour over the steaks to serve. Garnish steaks with parsley.

Same way you make any cheese sauce. Start off by making a Bechamel (white) sauce and add the crumbled Roquefort, stirring until it has melted. You can use Gorgonzola or blue Mascarpone instead of Roquefort.

hmmm, is it like blue cheese salad dressing, kind of? In any event, i'd google it. try "steak and roquefort cheese sauce" or "dressing" and then the word recipe. if that doesn't give you a gazillion ideas, try just 'roquefort cheese sauce recipe". Google can give you any recipe for stuff you have on hand too, if you are ever in need of dinner ideas!

Roquefort Cheese and Brandy Sauce

1 1/3 ounces [40 g] butter
1 medium-size onion, minced
2 tablespoons [30 mL] flour
1 cup [250 mL] chicken broth
1/2 cup [125 mL] milk
1 tablespoon [15 mL] Brandy
7 ounces [198 g] Roquefort cheese, broken into pieces
1 garlic clove, crushed
Melt butter into a casserole; add and cook onion until tender.
Stir in flour, stirring until bubbles form.
Remove casserole from heat, slowly stir in chicken broth, milk and Brandy.
Return casserole to heat; stir until sauce thickens slightly.
Using an electric mixer or a food processor, combine Roquefort cheese, crushed garlic and hot sauce, until smooth.



Roquefort Cheese Sauce For Meat
Ingredients
1 celery stalk, tender inner stalk
1/4 pound Roquefort cheese
1 cup heavy cream
1 garlic clove, minced
1 tablespoon red wine vinegar
1 small shallot, minced
paprika
Directions

Break celery to remove strings and chop into small pieces. Put celery, cheese, and cream into a blender and purée. Add garlic, vinegar, and shallot and blend. Pour into a bowl and season with paprika to taste.

For an easy way to make the sauce just get a tub of creme fraiche, heat it up in a pot and add in crumbled Roquefort.

Roqueforts the type of cheese only just discovered it myself, its lush, scrappy thanks for those recipes will try out
