Chocolate Chocolate Chip Muffins
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
4 tablespoons unsalted butter, melted
1/2 cup dark brown sugar
3/4 cup milk
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips
Serving suggestions: strawberry jam
Special Equipment: 12 (1/2-cup) capacity muffin tin, paper muffin liners, cooking spray
Preheat the oven to 350 degrees F.
Line the muffin tin with paper liners and lightly coat with cooking spray. (This may seem like overkill, but otherwise the muffins will stick.)

Instructions for Chocolate Muffin: Preheat your oven to 400°F. Coat muffin tins with non-stick cooking spray. In a large bowl, combine the cocoa, flour, sugar, baking soda, salt and vanilla. Stir in half a cup of chocolate chips. In a separate bowl, combine the eggs and milk. Add the egg/milk mixtute to the other ingredients until moistened. Scoop the batter evenly into the prepared pan. Sprinkle with the remaining chocolate chips. Bake for about twenty minutes or until a toothpick inserted in the middle comes out clean. Cool on a wire rack before removing from the pan.

Ingredients :
230 ml milk
60 ml sunflower oil
1 sachet vanilla sugar, or vanilla extract
2 eggs
300g self-raising flour
100g sugar
(chocolate chips optional)
Recipe :
Preheat oven to 350°F (180°C), grease 12 muffin tins and line with greaseproof paper/cake cases.
Mix the flour, oil and sugar together in a bowl.
Add the milk, eggs and vanilla.
Stir well.
Add chocolate drops and fill each muffin case to 3:4 with mixture.
Cook in oven for 20 minutes and leave to cool.

Chick pea muffins (gluten free)
Categories: Bread
Yield: 12 Servings
2 Eggs
½ c Grated cheddar cheese
½ c Pumpkin puree (see note)
½ c Diced onion
1 tb Chopped chives
1 ts Sugar
Salt & pepper (up to)
1 ts Curry powder (optional)
1 ½ c Chick pea flour
3 ts Wheat free baking powder
WET MIX DRY MIX Preheat oven to 400øF, prepare pans. Blend the wet mix ingredients together in a bowl. Quickly but thoroughly mix in the dry ingredients, spoon into pans & begin baking immediately. Bake for 25-30 mins. Makes 12 muffins. Variations: 1. Chick Pea with Green Peas: Add 1/2 to 1 cup of cooked green peas to the wet mix. 2. Chick Pea with Seeds: Add 1/4 cup sunflower & 1/4 cup sesame seeds to the wet mix. NOTE: To make 1-1/2 cups pumpkin puree, cook 1 lb pumpkin in 1/3 cup of water. you get in the car and then you put the key in then you start it then you drive to the store and you get a cook book or a box brand muffin mix then you get the stuff on the box or on the page in the cook book then you go home and you go back in the house and you make it.
