Ask a dozen people this question and you'll get a dozen different and often conflicting answers. BUT you're already half-way there because you understand that diets don't work. The only way to get and STAY fit, healthy and slim is to accept that your whole outlook on life has to change. Personally, I've lived a low-carb livestyle for almost all my adult life and it works great for me. Other people choose different routes. It's irrelevant, really. The most important thing is to incorporate exercise into your life and start eating healthily. Some people will suggest low-fat diets. Some will suggest low-carb. Some will tell you to go to weightwatchers etc... The truth is that EVERYONE knows what is a 'bad' food as opposed to a 'good' one. It's common sense. I defy anyone to say that chips, for example, are a valid 'good' food ever... and yet the odd chip isn't going to hurt you. So basically, cut all the crap out of your menu, eat good non-processed healthy food, exercise a lot and once, in a blue moon, treat yourself to something 'bad' too, because this isn't a diet you're planning to come off, it's the rest of your life. 'Plan' to be good 100% of the time, but then allow yourself to be bad SOME of the time, forgive yourself, move on, be fit, be happy.

My suggestions:
1) Cut out sugar. This has made the absolute biggest difference in my health.
2) Reduce or eliminate processed foods. Try to concentrate on fresh, whole foods as much as possible (meat, veggies, fruits etc.), foods of ONE ingredient. Avoid foods with ingredients you can't pronounce.
3) Exercise. It will improve your muscle tone, circulation, energy levels, bone density plus a whole bunch of other health benefits.
4) Drink water. Juices and even milk are full of sugar and other things you don't need. Soft drinks are just chemical concoctions.
5) Get enough sleep. In a dark room. Studies have shown numerous health benefits to this.
6) Do some research on low-carbohydrate diets. The media frequently misrepresents what low-carb living is about, how it works, and how healthy it is. Find out what starches, sugars and grains do to your system and make your own decisions on this.

Start easy, with a food diary. Use a chart or a journal to write down everything you eat or drink every day. Write down the date, the time of day, and about how much of every food or beverage you ate and drank. Be complete and honest. Stick with the food diary. This is the most important thing you can do to make your eating habits better.
Weigh yourself every week on the same scale. Use a tape measure to measure your waist. Keep track of your weight and your waistline, because improvements in weight or waist measurement can reduce your risk of getting diabetes.
Set goals that you can keep track of. For example, "Lose 15 pounds" or "Lose 3 inches off my waist" in the next six months. There is no diet program that works for everyone. One approach is to start with what you like and make small changes to see the effect on your goals.
You might look over your food records for the past week or two. Write down the fat and calorie counts of all foods and drinks. Use this list to plan a few diet changes. You can set goals for what you plan to change in the next week. For example, "Keep my daily calories below 1,500" or "Find healthier substitutes for five foods with the highest fat or calorie counts."

change your life style? try more excerices, use the stairs instead of the lift, ride a bike etc etc
when you've lost the weight eat sensibly, less fatty, more wholemeal
good luck
i'm 15st3lbs and would like to be back to around 14 1/2st (also 6'1")...I'm 46 though

yes well its not just about hopw much you eat,its what you eat,and iput on output so you need a ballanced diet as well as regular excersise,you need to walk at least 30mins ever day,if you get into this habit it becomes a way of life hense a lifestyle change,i have lost 37kelos good luck and eat plenty of fresh fruit and vegtables is best

Get moving, try going for walks or smimming.
Eat a healthy, no snacking on sweet things and watch your portion sizes at meal times.

eat smaller portions, drink more water, but down on junk food, and be more active, just little thing like take the stairs not the lift and walking to the shop not driving

I can recommend you avoid Aspartame.
Aspartame makes you fat. It is in loads of garbage that people put in their mouths like Diet Croak and chewing gum.
