its really sweet that u want to do something for ur bf.
try this:
boil some spaghetti or pasta. get some chicken, thaw it and marinade with some lime/lemon, ginger, pepper, and some italian herbs. temper some onions with some garlic in a nice hot pan and add the chicken. cook the chicken til its brown and then add a little bit of chicken broth - a little bit- like 1/4 cup. if u feel like the chicken is burning then add a little bit of water.
add some veges - like the ones that come in packets, already cut and frozen (like McCains) and add them into the pan. make sure the veges don't burn.
buy some evaporated milk - it comes in cans, the one i normally buy is the nestle carnation evaporated milk. add the evaporated milk into the chicken. as the chicken cooks taste it and make sure that the "chicken" taste is still there. add pepper becuz by now the pepper taste wud have diluted. make sure the chicken is being coated with the evaporated milk. when its done, mix in the pasta, only for abt 10 minutes and make sure u keep stirring it so that the pasta doesn't stick to the pan. now, put this entire thing into a nice dish. then, put some grated cheese on top and bake or microwave for 20 minutes til the cheese bubbles.
this usually comes out really well. hope it helps. i also use this same filling (minus the pasta) as a filling for pastry. just take some ready-made puff/flaky pastry and put a layer of the filling in the middle. take two hard boiled eggs and slice them and put them in the middle and in even distribution. then put another layer of the fliling. now, wrap the outer edges of the pastry to cover it- so that its a longitudinal pastry. with some extra pastry u can decorate the top. wet ur fingertips and moisten the top of the pastry so that it becomes golden brown in the oven. bake at around 200-220celsius in the oven.

Bake a chicken ; baked potato; buy package of salad mix and a bottle of salad dressing. Some precooked rolls that you heat in the oven (not microwave) a few minutes before eating. Cut the chicken in half or buy chicken pieces. Just salt and pepper and garlic if you like.
, allow an hour at 375F or a bit longer if you leave the chicken whole. Don't worry if that's too much food, it's CHEAP and any left over chicken can be used in a salad the next day with the salad mix that is left.
Ice cream with a jar topping is a good dessert.

I can sympathize with you if you can with me!! I have a 2 1/2 year old and a 14 month old and work full time. I get home at roughly 6:30 p.m. and try to have something semi-edible on the table by 7:00 p.m. I LOVE to cook, but have time to do any *real* cooking only on the weekends. :( So see, we're even! :D
OK, that being said, does he like chicken? If so, I have a great (and VERY easy) chicken recipe for you guys! Warning though--there's nothing "low-cal or low fat" about it.
Lemon Butter Chicken
4 boneless, skinless chicken breast halves
Italian seasoned bread crumbs
Dijon mustard
Juice and grated rind of one large lemon
3/4 stick butter (do *not* substitute margarine as the dish won't turn out)
1/2 tsp. salt
Fettucine, cooked according to package directions, and drained
Melt butter, lemon juice, lemon rind and salt in a small sauce pan over med. heat and set aside.
Preheat oven to 375 degrees.
Brush Dijon mustard over chicken breasts on both sides (how much mustard you want to use is up to you--I like a lot, so I generally use about 2 tsp. per breast). Dredge chicken in bread crumbs, coating completely. Shake off excess crumbs, and place breasts in a 13 X 9 baking dish and pour lemon/butter mixture over the chicken.
Bake 45 minutes, basting every 15 minutes. When chicken comes out of the oven, place breasts on the plates and scrape butter/lemon/crunchies :) out of baking dish into cooked pasta. Mix thoroughly and serve.
This may seem like a lot of work, but it's SUPER easy.

easy fish dinner: Ingredients are Sea bass or white fish, tomato sliced, lime juice, salt pepper and butter (melted)
Take a baking dish sprayed with pam or non stick spray, place the fish fillets in the dish. salt pepper, then mix the butter and lime juice and apply over the fish generously (try to have enough to leave the fish sitting in it but not over the fillets). Place the tomato slices on the fish and bake on 375 for atleast an hour. serve with rice and a salad or some green veggie. And don't forget a white wine with the fish.

I feel sympathy so here is my recipe for meat loaf.
First ground beef 85percent, oinion, ketchup , 3 eggs , and oatmeal. Mix together in a mixing bowl with your hands put in cassole dish put ketchup on the top cook in oven at 375 degrees for 45 minutes or until done not pink in the middle. Cheaper than going out.

buy a packet of Good Seasons Italian Dressing mix and mix it with 1/2 cup orange juice and 1/2 cup water. Pour over bonless skinless chicken breasts and marinate for at least 2 hours before cooking. Its delicious

Don't rely on the net reciepes to prepare a delicious meal for your boyfriend know his best meal. try out minced meat mixed with spaghette, irish potatoes+ deepfried fish or grilled fish, malteneted meat chopped in small pieces and these you can use ingridients like onions, muchuzimix (royoc), tomatoes, greenpepper, carrots,lemon.cooking oil, curry powder & others.

Ingredients:

5.Mild green or red chili peppers (seeded & sliced)………...4

9.Flour tortilla (warmed)……………………………………..8

12.Tomatoes (chopped)……………………………………….As required
Method:
1.Heat oil in a skillet.
2.Cook chicken strips over high heat for 5 minutes. Stir constantly. Drain when cooked and keep aside.
3.Add onion, garlic and chili peppers to the oil in the pan. Sauté over high heat for 2 minutes.
4.Add bell peppers and cucumber in the pan. Cook for 4 minutes over high heat. Vegetables will begin to have a blackened look around edges.
5.Add cooked chicken to the same pan and heat until hot.
6.Serve with warm tortillas, sour cream, sliced green onions and chopped tomatoes.
7.If desired serve with hot cooked rice, salsa and refried beans.
