Just cook veggies al dente...ie. just soft enough but not so much that all of their fresh color is gone. The flavor, nutrients and fiber disappear when veggies are over-cooked. Also, steaming or grilling veggies is the best way to retain the nutrients and fiber.

Cooking them too long wont get rid of the fiber. Fiber is a lot of the solid matter in vegetables. You're losing more liquid and other nutrients that way. The fiber is pretty much the same, sure you're gonna lose a little.

I like raw broccoli better than cooked. I always put out some Cesar salad dressing as vegetable dip for broccoli pieces
