Sweet Corn and Jalapeno Dip
8-12 servings
1 hour 30 min prep
2 (8 ounce) packages cream cheese
1/3 cup sour cream
2 tablespoons taco seasoning, from prepared taco season packet (more to increase spiciness)
2-3 tablespoons canned jalapeno slices, finely chopped (can vary according to taste or spiciness)
1 (15 ounce) can white shoepeg corn, well-drained
1 1/2 cups shredded Mexican blend cheese, divided into 3/4 cups
In large bowl combine cream cheese and sour cream and beat until smooth.
Beat in taco seasonings and jalapenos. Beat into this mixture one of the 3/4 C of the shredded cheese.
Fold in the corn and mix well.
Place mixture into a 9-inch square or comparable sized prepared baking dish(sprayed with non-stick).
Cover the top with the remaining 3/4 C of the shredded cheese.
Garnish top with a few sprinkles of taco seasoning.
Bake at 300 degrees F until cheese is melted and bubbly. (DO NOT OVERBAKE--IT WON'T BE CREAMY).
Serve hot with tortilla chips.
Spicy Sweet Potatoes

30 min 15 min prep
2 small sweet potatoes (3/4 lb total)
1 teaspoon olive oil
1/2 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon ground allspice
Preheat oven to 500°F.
Peel potatoes and halve lengthwise, then cut each half lengthwise into 4 wedges. Transfer to a shallow baking pan and toss with oil to coat. Arrange in single layer in pan. Combine salt and spices and sprinkle over potatoes.
Roast potatoes in lower third of oven, turning over halfway through roasting, until tender and browned, 15 to 20 minutes total.
Serve hot from the oven.
Spinach Balls (appetizer)

35 min 20 min prep
2 (10 ounce) packages frozen chopped spinach
1 (6 ounce) package chicken Stove Top stuffing mix
1 cup grated parmesan cheese
6 eggs, lightly beaten
3/4 cup butter, melted
salt, & pepper to taste
Cook spinach according to instructions, drain in a sieve, use back of a wooden spoon to press the spinach against the sieve to get as much moisture as possible out In a bowl combine the spinach, stuffing mix,cheese, eggs, butter, salt& pepper Mix thoroughly& roll into small balls 3/4 to 1" size.
Place on a cookie sheet& freeze.
When frozen place in a plastic zip lock bag.
To serve place frozen balls on a cookie sheet and bake at 350F 10-15 minutes or until lightly browned If you are doing them fresh or thawed only bake for 7-10 minutes.
Serve hot.

You figure if you're going to have something heavy like Chili for dinner you'd want to do something on the lighter side for appetizers. Think a simple crudite platter but with some awesome dipping for them. Blue cheese , hummus etc. You could also do nachos or taquitos for starters too.

I'd get some good bread for that. Maybe Jalapeno cheese bread - make bread bowls for the chili. Sour cream is good with chili. You could make that 7 layer Mexican dip. Unwrap a brick of philly cream cheese and poor a bottle of salsa on top of that. Serve with tortilla chips.

Sausage, rice and peppers (My favorite to go with this dish is Chappell Hill - Smoked Hot). Make 2 cups of rice (boil with 4 cups of water). Saute some green and red peppers and onions in butter. Bake the sausage for about 20 minutes on 375 degrees. Then slice the sausage and place on top of rice, and place the vegetables on top of everything. It's an awesome dish. Some guests can also try the chili on top of the dish.

Basic Poppers
Jalapeno Poppers 8 ounces cream cheese, softened
4 ounces sharp cheddar cheese, shredded
4 ounces Monterey jack cheese, shredded
6 bacon slices, cooked and crumbled, optional
1/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1 pound fresh jalapenos, seeded, halved lengthwise
1/2 cup dry bread crumbs sour cream, onion dip or ranch salad dressing In a mixing bowl,
combine cheeses, bacon and seasonings.; mix well.
Spoon about 2 Tbs. into each pepper half. Roll in bread crumbs. Place in a greased 15x10x1" baking pan. Bake, uncovered, 300 degrees for 20 min. for spicy flavor, 30 min. for med. and 40 min. for mild.
Serve with sour cream or dressing.

It's not tex mex-- but Potato Skins. Guys LOVE Potato Skins.
1) Bake Potatoes, cut in half. Scoop out most of the potato filling (but not ALL)
2) Cover with cheese and bacon bits, return to oven until cheese is melted.
3) Serve with sour cream.
Another variation is "Potato Slabs"-- which would serve more. You would cut the potatoes lenthwise into strips and then bake, cover with cheese/bacon.
