Well, why don't people eat meat in general is a huge question. Everyone has their own reason. Some people think it's wrong to eat animals. Some think it is environmentally irresponsible to use so much land and resources to raise them. Some people think it's silly because we put a lot of food into the animals to get less food out of them, and think it would make a lot more sense to just eat the grain ourselves and feed more people. Some people just think meat is gross.
Some people will eat chicken and beef, but not pork. Not eating pork is meantioned in the bible (leviticus, the old testiment) so many Jewish people don't eat pork. Leviticus is basically a very long list of rules, and very few of them are followed anymore. (one of them is something about how you should whip your slaves). I just finished culinary school, and left deciding that pork products are amazing, and if you're going to eat any meat, it should be pork.
A lot of people don't eat beef for health reasons. I've been trying to cut down on beef, and only eat beef that is locally raised and that I know is quality. The way cows are raised is disgusting. Rainforest is South america is cut down because they can make more money raising cows for fat americans. The cows often get sick and are forced to walk through a giant bath of antibiotics, which makes them even less healthy. They are also pumped full of hormones. Besides all that, beef is just not something you should eat as often as Americans do. Nutritionests recommend only eating beef once a month. But, man, nice, locally raised, pasture fed beef sure is delicious.
I have never met anyone who ate beef and pork, but not chicken, unless they just don't like chicken.
The next time you meet someone who doesn't eat meat, just ask them why. I'm sure they won't mind telling you, as long as you don't criticise.

There are several reason people do not eat meat. Some do it for religious reasons, some for heath, and others for animal rights.
I am a vegan. This means, I not only stay away from meat, but I choose not to eat anything from an animal - including milk, eggs, cheese, etc.
My personal reason is that I am against factory farming. Many people think that vegetarians and vegans have a problem with the killing of animals. Actually, while we don't LIKE the killing, our problem is less with the killing and more with the animal care.
I have tied this into my religious beliefs, somewhat. I have always been taught that all of God's creatures should be treated with dignity - even if they are only raised for food. I do not believe that my God approves of the way we treat animals raised for slaughter.

I'm not a vegetarian or a vegan, but alas, I've a few things to add:
I don't eat pork because I think it is unclean; pigs wallow in their own feces, how nice is that??
As for chicken and beef, I really don't like either one fried or baked. Grilled is the only way to go...and I really don't eat either one more than once or twice a week, if that....

Pork is the most popular meat eaten in the world. in old times they did know how to cook it to kill off all the stuff and ended up overcookling it a lot. just how like chicken needs to be fully cooked.

Lots of reasons. Some have a spiritual objection to killing sentient creatures. Some choose vegetarianism for health reasons. Some just think animals are too cute to eat. Others realize that factory farming is damaging to the environment. Still others simply find the thought of chewing up a carcass disgusting. I mainly find that it's just unnecessary; I can sustain my life without consuming death so that's what I choose to do.

Vegetarians have their beliefs of not eating any pork, chicken, and beef meats. That kind of behavior is part of their sort of "religion."

About ten years ago my son watched a programme about pig farming. He was so horrified at what he saw that he hasn't eaten any sort of meat since. He won't eat eggs either after seeing what battery chickens have to suffer during their short lives.

It could be a religious reason, or they think that food is yucky. THey also may not like meat, because it comes from animals and they don't believe in killing the "poor animals".
