HOE CAKES

2 c. cornmeal
1 tsp. salt
2 tbsp. oil
1 c. boiling water
1 c. cold water

Mix 2 cups cornmeal, 1 teaspoon salt, and 2 tablespoons oil. Add 1 cup boiling water, stir well. Thin with 1 cup cold water to pouring consistency. Drop batter (as pancakes) on a hot greased griddle. Turn to brown on both sides. Serve hot and crisp.

MOM'S HOE CAKES

Pour boiling water or scalded milk on salted cornmeal, let set a little. Pour enough liquid to make meal soft. Put bacon fryings on griddle heat. Add two or three tbsp. of batter on griddle. Smooth over surface making the cake about 1/2 inch thick and round in shape. Brown and turn and brown other side. Serve hot with butter.

1 1/2 c. corn meal
1 c. all-purpose flour
1/4 c. Crisco oil
1 1/4 c. buttermilk
1/3 c. sugar
2 eggs, beaten
1 tsp. salt
1 tsp. soda

Combine cornmeal, flour, sugar, salt and soda in medium bowl. Add eggs, oil and buttermilk. Stir just until ingredients are moistened. Pour into heavily oiled skillet 1/4 cup of batter for each hoe cake. Fry over medium-high heat 1 or 2 minutes or until golden brown on each side. Use additional oil if necessary. Drain on paper towels. Serve immediately.

A hoe cake is a form of flat bread that, in the days before conventional ovens, was made on the flat surface of a garden hoe that had been heated-up in the fireplace. The hot hoe acted as a kind-of makeshift griddle.

Thanks for asking. Now i know what a hoe cake is but am sure it wasn't what CHIK saw. that nwas a mud pie.

Similar to cornbread, but sweeter.
Ask your grandmother; she will know. When mine was alive, she used to make it.
