Prawns With Hot Bean Sauce

Serves 4
INGREDIENTS:
1 pound prawns peeled and deveined
Marinade:
1 egg white
1 teaspoon salt
1 tablespoon cornstarch, or as needed
Sauce:
4 tablespoons ketchup
1 tablespoon hot bean sauce
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon chicken broth or water
Other:
1 teaspoon cornstarch
2 tablespoons water
1/2 green onion, chopped
1 tablespoon ginger, finely chopped
4 cups oil for deep-frying
1/2 teaspoon salt, or to taste
1/2 teaspoon sugar, or to taste
3 to 4 lettuce leaves, shredded
2 lemons, cut into wedges
PREPARATION:
Rinse the prawns under warm running water and pat dry. Leave whole, or cut in half lengthwise if desired. Use your fingers to mix in the mariande ingredients. Marinate the prawns for 30 minutes.


In a small bowl, mix together the sauce ingredients. Set aside. In another small bowl, dissolve the cornstarch in 2 tablespoons water. Set aside. Chop the green onion and ginger.

Heat the oil in a wok to about 300 degrees Fahrenheit. When the oil is hot, add the marinated prawns. Deep-fry until they change color and are nearly cooked. Remove from the wok with a slotted spoon and drain.

Remove all but 2 tablespoons oil from the wok. Add the ginger and green onion and stir-fry until aromatic (about 30 seconds). Add the sauce ingredients. Give the cornstarch and water mixture a quick re-stir and add to the sauce, stirring quickly to thicken. Add the prawns back into the wok. Sprinkle the salt and sugar over top. Serve the prawns on top of the torn lettuce leaves, with lemon wedges for garnish.

If you are definitely doing this on lettuce, do buy "baby gem hearts" they are the perfect one person size & they curl to make a 'spoon'.
Buy cooked prawns (the best quality you can afford) I like a prawncocktail sauce to have lots of flavour - mine goes something like this 2 parts mayo to 1 part ketchup, add a sqiurt of tomatoe puree, a glug of cooking sherry (or the good stuff or leave out if you don't do alcohol) lemon juice, lots of ground black pepper, some salt, a dash of tabasco & a good splash of worchester sauce. Remember when you taste it that you will be adding prawns & lettuce, so it should be that bit more pungent than you want as a final product.
Also, if you want you could wrap these up as parcels, in rice paper (the wet, not dry stuff!) But if you do you'll want to finely shread some lettuce and put it IN the parcels.

You will need:
Small lettuce head (Cos is good)
Tiger prawns
Tomato ketchup
Mayo
Lemon juice
Cayenne pepper

Mix equal amounts of tomato ketchup and mayo, add splash of lemon juice and stir well. Put aside. Tear lettuce into small leaves about the size of a dessert spoon and top with a large prawn. Cover with a spoon of dressing and sprinkle over a dash of cayenne pepper. To eat, just pick up lettuce with fingers. Delish.

I like to take prawns, wrap with bacon, drizzle with teriaki sauce, slide 3 - 4 on wooden skewers soaked in water for at least 20 - 30 minutes ( to prevent burning ) & grill over medium coals 4 - 7 minutes turning once til done. Serve on a bed of lettuce with a honey BBQ or melted garlic butter. Yummy!!

Are you kidding??? know how to make a nice chicken capers garlic onion tin ay tomatoes and corriander with sticky rice but not prawn parcels but sounds good tho, all the best in yer quest.

parcels sound good - u can make them using frozen vol au vents - put vol au vents in the oven to rise and once they are baked fill them with prawn cocktail or any other filling such as tuna, chicken, guacamole etc u can buy them at most supermarkets - v v easy to make

try using big prawns then you can pick them up woth cocktail sticks!
