Is there a way to stop a sudden increase in pulse rate, which can last for a few minutes, or up to a day? Accupuncture? Hyperventilation? A pill?

First you should find out the cause of your tachycardia by consulting with your doctor and a cardiologist. There are many causes of a fast heart beat, but because you describe the onset as "sudden", it makes me think you may be having an arrhythmia called SVT (Supraventricular Tachycardia). This can be cured with a procedure called radiofrequency ablation. It is done in the hospital setting by a special cardiologist called an Electrophysiologist. Your question implies that you would like to find a more homeopathic solution to this, but if it is SVT, you will probably need a more "Western" medicine approach to cure it.

The best way to stop it is to find out why it is happening. I don't know your age, but you may need a cardiac stress test. If you are healthy, there could be some neurologic cause (vagus nerve) that can be treated by specially trained chiropractors or you family doctor. I treat many patients with similar complaints and it is simply overstimulation of the vagus nerve. you first need to get an Echocardiogram , possibly a stress test and a thyroid function test ,you most likely have a condition called SVT (Isoperimetrical Tachycardia).
if all the above tests were negative then you may benefit from a group of medicines called Beta Blockers( like toprol ,lopressor, coreg, atenolol ..etc),please consult with your physician ,
