INGREDIENTS:
8 lasagna noodles, uncooked
1 cup shredded reduced-fat Monterey Jack cheese
1 (15 ounce) container part-skim ricotta cheese
1 (4.5 ounce) can chopped green chiles, drained
1/2 teaspoon chili powder
1/8 teaspoon salt
2 cups drained canned no-salt-added black beans
Cooking spray
1 (15.5 ounce) jar no-salt-added salsa
Fresh cilantro sprigs (optional)

DIRECTIONS:
Cook lasagna noodles according to package directions, omitting salt and fat; drain well.
Combine cheeses and next 3 ingredients, stirring well. Spread cheese mixture over one side of each noodle. Spoon black beans evenly over cheese mixture. Roll up noodles, jellyroll fashion, beginning at narrow ends.
Place lasagna rolls, seam sides down, in an 11- x 7- x 11/2-inch baking dish coated with cooking spray. Cover and bake at 350 degrees for 25 minutes or until thoroughly heated.
To serve, spoon salsa evenly over rolls, and garnish with cilantro sprigs, if desired.

Delicious Indonesian Vegetable Salad with Peanuts
Serves 8
Ingredients:
5 cups cabbage, coarsely chopped
boiling salted water
1 package of 10 ounces French-style green beans
1 1/2 cups unsalted cocktail peanuts
soya sauce and lemon juice
1 can bean sprouts, drained, about 1/2 lb.
1 package of vegetable flavour chow mein noodles, cooked and cooled
1/4 cup sliced radishes
1/4 cup grated carrots
2 hard-cooked eggs (for garnish)
hot chilli peppers or banana peppers (for garnish)
Spicy Curry Dressing
1/2 cup light Italian vinaigrette
1/2 teaspoon curry powder
1/2 teaspoon Indonesian red chilli paste
honey to taste
Prepare the dressing first and set aside. Boil the water and add the noodles
and cook them according to directions. Add the eggs and boil ten minutes.
Then take them out and let them cool before shelling.
Next, change the water and bring back to a boil. Cook cabbage in water till
tender-crisp; drain and reserve water. Use a colander. Next, cook green beans
for about half the time of the cabbage. During this time, grate carrots, chop
cucumber and chop radishes
Chill both in fridge. Place peanuts in oven and brown lightly under the broiler.
Use a cookie sheet, lightly oiled. This can take 3 to 5 minutes. Do not let
burn.
Place cabbage on the bottom of a large oval deep platter or large bowl. Layer
green beans and bean sprouts. Place noodles on top. Flavour with soya sauce and lemon juice. Sprinkle
salt and pepper if desired. Add a layer of nuts. Then layer carrots, cucumbers
and radishes. Sprinkle nuts around edges to make a circular or oval design.
In the middle, place banana or chilli peppers and quarter eggs. Place around
edges.
Serve with dressing on the side.

A big pot of chili with peppers, corn, and a mix of canned beans. Stir in fresh chopped cilantro at the end. Don't put fake meat in it as it is more gas producing than beans alone. We want to make a good impression! I would use onions but not garlic, for similar reasons. Serve with cornbread, corn muffins, or polenta squares.

CARROT-POTATO CASSEROLE
4 medium potatoes, peeled and cubed
1 medium onion, peeled and sliced
1 can (10-3/4 oz.) condensed cream of potato soup
4 medium carrots, peeled and sliced
In greased casserole dish, layer potatoes, then onions, then carrots. Combine soup with 1 soup-can of water. Pour over vegetables. Bake, covered at 350 for 30 minutes; uncover and bake 30 minutes more or until vegetables are tender. Serves 6

A Mexican food buffet. Put a stack of plates on the table along with cooked beans (pinto, black bean, vegetarian refried etc), stirfried peppers, onions, tomatos, shredded lettuce. etc. with tortillas and taco shells on the side. It's easy so everyone can fix what they like. =) hope that helps.

lots. but my fav is you cook rice. then just make a big stir fry then srve it on top of the rice. you can add a bit of soya sauce to the rice for flavor. you can also add tofu into the veggies. i would srve it with corn on the cob on the side. this will take about 30 - 60 minutes to prepare and cook all together (it depends on how much cutting you have to do) hope this helps

Go out to walmart and go to frozen food and buy a box of boca soy ground burger then go to box dinners and get some hamburger helper. skip the step with coolin the meat and then throw everything in the pan along with a bag per box of hamburger helper and cook as directed.
