Where I live chicken, rice and peas is standard Sunday fare. Everyone has a favourite recipe.

1/2 cup of black eyed beans or other pulse, pre-soaked until soft
Seasoning - thyme preferably fresh) , garlic, black pepper, salt
1 onion
2 oz coconut cream
1/4 1lb rice

Method:

Boil the beans with thyme, garlic, onion and black pepper. When cooked, add coconut cream and salt to taste. Add the rice to the water and boil until cooked.


Chicken
Ingredients -
Chicken - One serving (1 breast, 2 drumsticks, 2 thighs) per person.

1 large onion
3 cloves garlic - chopped
All Purpose seasoning
Salt, pepper to taste
Lemon or lime juice
Hot chilli sauce to taste
Cooking oil

Method:

Wash chicken. Mix salt, lemon / lime juice, chopped onion, garlic and All Purpose seasoning. Make sure the chicken is coated in the mixture. Fry until golden brown. (You can grill or bake the chicken instead of frying). Bake in moderate oven for about 30mins to complete process.

Sauce:
2 large peppers (any colour)
Large onion
Large tomato
Crushed garlic
Salt, pepper

Method:
Chop the vegetables into small pieces. Drain the oil from the chicken pan into a separate saucepan and add a little water.Mix in the crushed garlic, and chopped veggetables. Simmer until sauce thickens and vegetables have softened.

Antillean Beans and Rice

Ingredients:
1 8-oz bag dried red beans
1 head garlic
1 tbsp. parsley
3 scotch bonnet peppers
1 medium size oniond
salt to taste
1 lb dry rice, cooked

Procedure:


Wash beans and soak in at least 6 inches of water overnight.
Chop onion and saute in a 8-quart pot in a bit of margarine or vegetable oil.
When onion is soft, add beans with their water. Add scotch bonnet peppers, cutting only one in half (this will render the dish pretty spicy).
Boil over medium heat for several hours, adding water as necessary. Cook until beans are very soft and there is little water left.
Add crushed garlic, parsely, and salt. Leave over heat for 10 or 15 more minutes, stirring frequently.
Add to cooked rice, pouring over it or mixing the rice and beans together

Banana Foster

Ingredients:

2 Tbls Sweet Butter
1 tsp Banana Liqueur
4 tsp Dark Brown Sugar
1/4 Cup Cognac
6 Bananas
1 Pinch Cinnamon
Vanilla Ice Cream

Procedure:
Combine the butter and brown sugar in a saucepan. Cook over medium heat until caramelized.
Cut the bananas in quarters and then split and place in the saucepan. Cook until tender.
Add the cinnamon and liqueur. Blend well.
Place a generous scoop of ice cream in each serving plate.
Heat the cognac and then pour over the bananas (do not stir).
Ignite and spoon the flaming bananas over the ice cream.
Serve.

well im jamaican and i love west indian food compared to the american crap i hae to eat. but i love oxtails, rice and peas, curried goat, curried chicken. Here is the website it gives u all the recipes for jamaican cuisine.
