I like spaghetti squash plain with a little margarine/salt. It's a good side dish to something high in protein (egg based or legume based). I find spaghetti squash cooks best in the microwave - cook one half at a time on a microwavable plate loosely covered with saran wrap and a couple holes poked through, and cook for about 6-8 minutes. Spag. squash tastes a lot like cabbage, but with a different texture.

Roasted veggie sandwiches are a great way to use zucchini - thinly slice the zucchini (with an equal amount of some sliced Chinese or Italian eggplant and about 1/4 of a red pepper, in strips). While you're frying everything in a bit of olive oil, sprinkle some salt and oregano over the entire mixture and stir in (Italian seasoning works well too). Then when everything is throroughly cooked, make sandwiches with some nice toasted Italian or French bread. You can also make this with zucchini alone, but it's not as good. The recipe is simple, but tastes amazing!

I add my homemade marinara sauce to baked spaghetti squash and it is delicious and cuts calories.

I love fried zucchini with ranch, or cooked in butter in the skillet as a side dish. Or placing it inside a vegetable lasagne. Yum.

cube up your zucchini and squash and cook until tender and when done add shredded cheese till melted. done.
