if so, how would one prepare them

yes, and they're delicious. I prefer them to any other kind of cooked green. You cut the stems into 2" pieces, and chop the leaves a little. Cook them gentle with enough water to cover, with the lid on, until tender, about 4-5 minutes. I like them with either butter, or olive oil (and sometimes garlic). You can drain them and sprinkle with parmesan cheese...but they're healthy and you'll enjoy them. They don't have the bitter taste of collards and kale, but have the same vitamins.

Don't listen to twizz , beet greens are great for you , They are full of iron and Vitamin C. Just wash them off and steam or boil them like you would Swiss chard. By the way twizz it is rhubarb leaves that are Poisonous not Beet Greens.
Many people actually use beet greens in place of spinach

Dont listen to Twizz the leaves of beets are okay cooked just like greens check it out on the web when theu're young and tender /// OR A SALAD

Yes, they are yummers. One way to make them is to steam, then butter them (similar to collard greens, spinach or kale). One Ukrainian dish I've had is to put some raw bread dough in the centre of a fresh leaf, roll it up, put in a buttered casserole. Continue till you run out of either leaves or dough. Pour heavy cream over, add big dollops of butter and bake till bread bakes up - (sorry, never timed it - you can tell by looking). These are absolutely scrumptious and I'm really embarassed that I can't remember the ethnic name for it - but it's Beet Leaf Casserole.

Beet greens are great and full of iron, Just wash and biol until soft. I love them with butter.

I have always heard that they are very nutritious, but double check this before you eat them. I think the above poster is thinking of rhubarb.(it looks like red celery) I would think you cook them like any other greens. A whole truckload will cook down to like a cup LOL!!

Yes they are wonderful. Prepare them like you woud any other leafy green. Enjoy!
Steam or simmer ina small amount of water. Season to taste.
* Be sure & wash them well, all greens tend to be sandy.
