Actually I have found out about this on the BusinessWeek site. If you click through to Slide Shows, then under the Cutting-Edge Chefs you can find a dish which contains Fried Mayo. It's sure something out of ordinary, but hey if someone did it I wanna know how.

Fried mayonnaise:
* 1 cup milk, cold
* 2 cups grapeseed oil
* 3 grams gellan (a fermented gum)
* 5 grams gelatin
* 2 Tablespoons mustard
* 1 Tablespoon lemon juice
* 1 ½ Tablespoons micri (neutral sauce base)
* 1 ½ Tablespoons salt
* 1/4 teaspoon pepper
* ½ cup panko breadcrumbs
* ½ cup flour
* 1 egg
* 1 egg yolk


For mayonnaise:
Shear the gellan into the cold milk. Bring to a boil and cook, stirring constantly, until the gellan is fully hydrated at approximately 194°F, or when the suspension rapidly loses viscosity. Heat the grapeseed oil to 210°F in a sauce pot and soften the gelatin in cold water. Dissolve the gelatin in the hot milk mixture and slowly whisk in hot oil, a little at a time. Once all the oil has been incorporated, heat the mustard, lemon juice, Micri, salt and pepper over medium heat then fold into the milk mixture. Spread on to a half sheetpan and allow to cool. Once cool, cut into cubes and coat with flour, egg and Panko breadcrumbs. Deep fry at 350°F until golden.

its very easy first make your own mayo:

1 tablespoon dijon mustard
splash of vinegar
1 egg yolk
salt and pepper
150ml vegetable oil

mix the first 3 ing together, then whisk in the oil slowly till it thickens and season to taste

next let it sit in the fridge for 30min.

whisk in 1 more egg yolk and 2 tablespoons of SIFTED flour

next make your breading get 3 separate bowls

one with flour, one with whisked eggs and salt, one with breadcrumbs

carefully add spoon fulls to the flour and goat it, then in egg, then in breadcrumb

They are to delicate to handle so use a slotted spoon to carefully lay in 350 degree veg oil
and fry for about 30 sec till golden brown, drain on a paper towel and season with s and p

you can serve it on top of a steak or a warm frisee salad with bacon and a poached egg.

Its actually very nice if you make the mayo yourself don't try it wit store bought.

things to add to the mayo before frying:

fresh herbs, chervil, tarragon,parsley, chives
fresh tomato cooked down
horseradish
goat cheese
cooked and pureed butternut squash

you can get pretty creative with it.

I don't think you can. The only thing I could think of would be heavily covering the mayo in csome sort of firm batter.

Fried mayo? Mayo is oil and eggs...I have no idea why or how you'd want to do that...sounds gross too!
