Lemon Pepper Pasta and Asparagus
Serve a 30-minute weeknight pasta meal, vegetarian style.

2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
1/4 cup olive or vegetable oil
1 medium red bell pepper, chopped (1 cup)
1 pound asparagus, cut into 1-inch pieces
1 teaspoon grated lemon peel
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
3 tablespoons lemon juice
1 can (15 to 16 ounces) navy beans, rinsed and drained
Freshly ground pepper, if desired


1 . Cook and drain pasta as directed on package.
2 . Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Cook bell pepper, asparagus, lemon peel, salt and 1/2 teaspoon pepper in oil, stirring occasionally, until vegetables are crisp-tender.
3 . Stir lemon juice and beans into vegetable mixture. Cook until beans are hot. Add pasta; toss. Sprinkle with pepper.

I have been a vegan for over 30 years. No day is the same. There is so much things. Plus, all the new soy meat they have come out with lately makes life good. Go to a bookstore and get some cookbooks for vegetarians. Give you some great ideas.

Dhal:

1 med onion, chopped
2 cloves garlic, finely chopped or crushed
2 tbs olive oil
Large cupful of lentils - any kind (I prefer chana), washed and thoroughly cooked
500g (sorry, can't convert) seived tomatoes
1 tbs med curry powder
Good handful of chopped fresh coriander (cilantro) leaves
1 tbs lemon juice
Salt and pepper

Heat the oil. Add the onion and saute until slightly soft. Add the garlic. Add half the tomato. Once heated through, add the lentils. Stir in the curry powder, and add the rest of the tomato. If you like a hotter spice, add a little chilli powder to taste. Leave on a low heat for about 15 mins, allowing the sauce to reduce a little. Add the lemon juice, salt and pepper to taste. Stir in the coriander. Leave on low heat for 2 mins. Serve in warm bowls and eat with pitta bread. Serves 2 generously, packed with protein and vitamin C.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Lentil Casserole
prepare 1cup dry each of brown rice and lentils
microwave 1/2 diced onion and some fresh garlic until clear
grate about 8 oz of cheese
1 1/2 cups yogurt
cumin to taste
mix it all together, putting some cheese in it and most on top, then bake until bubbly
i actually spoon the mixture into individual serving plastic bowls, then put the cheese on top, and zap them when hungry. this recipe makes about 7 or 8 servings.

Try the food network. If I can I watch a few of the shows each week. With a little adjusting you can make many of them Veggie if not Vegan.

here is my answer to a previous question today:

Ratatoille: Chop up green peppers, red peppers, any other color peppers, zucchini rounds, onion, tomatoes into chunky pieces. Put olive oil in a large saucepan and lightly stir cook each vegetable at a time and set asdie....In the end put all the vegetables back in the saucepan, add a little more olive oil, salt and a touch of basil or oregano. Let it simmer over low heat for 1/2 hour and stir occassionally.

Vegetarian sheperds pie, except with no potatoe, with sweet potatoe sliced and layered on top of a load of mince quorn (veggie alternative to actual mice meat) mixed with chopped tomatoes, broccoli, cauliflower, carrots, peppers and nuts. Put in some sort of dish in the oven. believe me you will have all your non veggie friends green with envy
