I agree, I think Danish food is tasty. I remember noticing they didn't really seem to eat a lot of fresh vegetables, but there was such fantastic seafood (oh! the shrimp!), cheese, pork, and pastry that it really didn't matter. Did you have Frikadeller? It took me years after I got back, but now I think I have an authentic recipe down and I make it all the time. (Cold leftovers are great for smorrebrod, of course.) Everything simple and fresh--that's Danish cooking. You've made me hungry to go back.

Nowdays a vegetarian, but used to love eating:-
CrumbedPork rind rib chops with potatoes and white parsley sauce
Calves liver with brown onion gravy and potatoes
Pork Roast with crackling, red cabbage, caramel potatoes.
Still love creamy rice pudding - especially at Christmas when I vie for the almond in it so that I can win the MARZIPAN PIG...
Still bake the Danish biscuits (cinnamon is my favourite)

when i was stationed in germany i went there every 3 months for 3 weeks. i lived on Carlsberg Elephant beer, and i loved the food and the people. did you check out legoland.
