Spicy Mango Pickle

Ingredients:
Medium raw firm mangoes: 3
Mustard seeds: 1 tb
Fenugreek seeds: 1/2 tb
Aniseed: 1/4 tb
Red chilly powder: 1/2 cup
Salt: 1/2 cup
Turmeric powder: 1/5 cup
Oil: 1 cup
Glass, china or earthen pickle jar
The Steps:
Pre - Preparation :
Chop the mango in chunks and crush the mustard and fenugreek seeds.
Preparation :
1) Sprinkle rock salt and 1/2 the turmeric on chunks in jar.
2) Shake the jar so the pieces are evenly coated.
3) Keep aside and shake jar in a pendulum motion every 10-12 hrs,
for 2 days.
4) On the third day empty the contents into a non-iron colander and
allow the water to drain for 15-20 mins.
5) Spread out on an old kitchen towel for 1 1/2 to 2 hrs.
6) Do not use white cloth, since turmeric will stain the fabric or
use disposable.
7) In a large plastic or glass bowl, mix all the dry ingredients left.
8) Add the mangoes and half the oil and mix very well with clean dry
hands or a spatula.
9) Transfer to a clean jar and press down lightly.
10) Pour remaining oil on top.
11) Allow to marinate for 10 days before using.
12) Take out in small quantities for use in a small glass jar.
13) The main jar should always have a layer of oil floating on top.
14) Press down the pieces and masala firmly.
15) This pickle will not go bad for over a year even at room
temperature.

Here is a very simple mixed spicy pickle.
Wash lemon and dry it off very well. Cut lemon into tiny pieces. Add salt and thinly sliced ginger, whole green chillies, sliced carrots, culiflower florets. All the veges have to be washed and nicely dried off. This should yeild around 2 1/2 pounds of mixed veges. For extra care you can simply warm them up in the oven or in a pan to remove any moisture before cutting them. This ensures the pickle will not go bad even if you keep it for months without preservatives.
Keep all the above in a glass jar, add a cup of lemon juice and let it sit for atleast 10 days. Shake the jar every day. On the 10th day add the spices. In a dry pan add 1 teaspoon of fenugreek seeds and roast till brown then keep aside, now add 3/4th tbsp of mustard seeds and roast till they pop and keep aside. Then to the same pan add 2 table spoons of kashmiri chilli powder (or less depending on your taste buds - you can add it later), 1 table spoon of paprika and 2 tsp of asfoetida powder. Fry this for excatly 1 min on medium flame. Dry grind all this to a fine powder. Put the veges in a big bowl and add this spice powder. Add a cup of warm water and mix well. You can add more salt or chilli powder if needed. Bottle the pickle again and pour 1/4 cup of warm oil on top. Close the jar and keep it so for 3-4 days before eating. At no point should the pickle be touched with hand or with wet spoon. Only use well dried metal spoon. This tastes phenomenal.

For mango pickle, the same spices as above but no other veges. Only raw mangoes cut into small pieces. The procedure remains the same. You can either use a cup of lemon juice or white vinegar.

I make this pickle at home all the time along with mango pickle as my family only likes home made pickle.
The only other easy way out it to buy store bought.

I am S. Indian and we eat pickels with our meals...mostly lime, lemon and mango..home made pickles are a long process to make. you are better off eating the store bought. they r pretty good. have you tried the ginger and garlic pickle from Pataks..it's very good!

you can buy it in any shops i.e asda and tesco...
Patack mild mango pickle is nice...
Or if you want to make some...
Buy green mangoes of Indian shops.
Cut it into cubes.
Add some salt to it and allow it to dry for 3-4 days.
Grind some garlic and some meti ( It is small brown seed when you crush it it is yellow, buy in Indian shops)
Add some turmeric and some oil to it.
Allow it for a few days then eat!!

I love those things, too, but have to have a huge amount of raita to cool me off; Check online under Indian food...I would think it's a simple pickling method using vinegar, hot spices....

pataks do a good one u can buy, also they do a nice lime pickle, takes a bit of getting used too but its addictive
