DO NOT EAT TURTLE EGGS IN MEXICO. If you are caught harvesting the eggs, you will go to prison for 10-15 years. If you are caught eating them in a restaurant you might get off with only 5 years! Mexico is REALLY serious about ending this ecological disaster (the destruction of the sea turtle population.)

This is NOT the "old" Mexico of wimpy laws and "wink, wink, here's 50 pesos." This is the "new" environmentally conscious Mexico of thousands of environmental enforcement officers, police officers and university volunteers patrolling beaches and checking local area restaurants constantly to prevent this crime. You REALLY don't want to screw around with that.....

Re: the others, insects are not my thing either, but huitlacoche is delicious. We often have it down here as a "botana," a snack make in quesadillas with cheese and corn. A year and a half ago at a New Year's party in Patzcuaro I had filet mignon in a sauce of brandy and cream with huitlacoche - it was "to die for" ......

Actually these dishes are pre-Hispanic and still available in the interior of Mexico, but definitely not main-stream Mexican food. I have tasted Huitlacoche, a mushroom that grows on corn, It was served on a hot tortilla with melted cheese and was surprisingly tasty! As for insects I will pass and leave that culinary delight for someone else. About turtle eggs, PLEASE don't eat those, sea turtles are on Mexico's endangered list, it's not only illegal, it's not good for our eco-system.Other than that, enjoy, you sound like an adventurous connoisseur.
