Depending on the recipe, I would go with fruit pectin. You can buy it in regular grocery stores where they have the makings for jelly.
As for those debating the contents of kosher gelatin, it comes from the marrow of fish bones. Gross, I know, but regular gelatin comes from the marrow of pork bones, so that's not much better.

If it's because you're vegetarian, some substitutes would be agar agar, arrowroot, kudzu, or you could look for kosher gelatin, as gelatin is made from animal fat.
Agar agar is largely used in chinese cooking, so Asian groceries would be your best bet. Otherwise, health food stores if your local supermarket doesn't stock any of the above.

You could use agar-agar, a kind of seaweed.Its available in strips or powder form.But it would not give you the same result. Agar-agar could set at room temperature. You get a firmer texture but not the wobbly jello feel. Trifles would not taste the same without gelatine.

I've never tried this myself, but I just wanted to mention that you should not trust "Kosher" gelatin products, b/c they can still contain animal and fish products contrary to popular belief. Hain makes a vegetarian jello powder, but I believe it only comes in fruit flavours. I've heard Agar Agar and Kudzu are good subsitutes though.

I agree with agar agar but it looks like no-one thought of flax seeds soaked in a glass overnight. Works well as egg replacer too.

Aspic, carageenan, arrowroot, cornstarch and water, flour slurry, egg whites or cream of tarter.
If you want the gelatin effect though, Im going to say Aspic.
