I make some kick a** chicken enchiladas w/ sour cream sauce. rice and beans with chips and a spicy guacamole. That is my favorite. I could eat that like everyday if it wasn't so fattening.

Mine has got to be the NACHO.
There is a great way to bake them though. Not just your plain nacho. These NACHOS are perfect. You make sure you have a whole triangle or round nacho chip. Prepare your own salsa and place on the nacho. Then you place your grated cheese and bake in the oven until the cheese melts. Your condiments after will also compliment your NACHO, either use green hot salsa, red salsa along with sour cream to top. This way when placed in the oven each Nacho gets it own flavour and sauce/cheese.
Thats the way we bake just your simple tasty NACHO at my house.Mmmmmmm

To many places now a days pack the plate with all that other stuff, meat, green peppers, onions, etc.... and then puts the nachos bunched together.

An old Spanish recipe from New Mexico:

Papas con calditos.

Dice up one large potato for each person who will be eating. Place the diced potatoes in a bowl and fill the bowl with cold water. Stir the potatoes occasionally to release the starch.

Take any piece of beef, I use flank steak, and cut it into smaller than bitesize cubes.

Heat about a quarter inch of oil in a large and deep fry pan. When the oil is hot, reduce the heat to about medium and add the meat and cook until brown. Using a strainer type spoon, remove the potatos from the bowl of water to the frying pan. Cook the meat and potatos together for about ten minutes. Then, slowly add the starchy water to the pan until the water completely covers the meat and potatos. Simmer for a half hour and serve with homemade tortillas. YUM!

Seafood enchilada with salsa verde, a part of refried beans with manchgo, and Mexican rice. that is my absolute fashionable. even though it has to go back from a community eating position, El Guadalajara.

Chile Relleno or tamales. It's hard to pick between the two. Oh! and I have to have some good rice and whole beans with some corn tortillas!

Steak tacos with tomato,lettuce,cheese,avacado.
I also love the rice and beans and of course guacamole with chips. MMMmmm I am hungry!

chille con carne, made with beans etc. but no meat as I'm a vegetarian.... sooooo yummy with sour cream, grated cheese, chille sauce beans on rice..... YUMBO
