There's a big difference between food and cuisine.
French cuisine is by far the most sophisticated and complex of all (the word cuisine itself and numerous cooking terms are French). The depth of it is incredible. Think about it: from entrees, shellfish, fish, all sorts of meats (cured, roasted, baked, grilled and even raw), vegetables, soups, herbs, sauces, baked items, desserts and pastries, hundreds of wines carefully paired with each dish, hundreds of different cheeses, etc.
If you go to a formal dinner with say 5 courses, you'll have about three or four different types of glasses, spoons, forks and knives and other utensils. Service will be done by different people, each specialized in something: breads, cheeses, seafood, desserts, wines, etc.
And there's the very important social aspect of food: people take the time to sit down, with friends, family or colleagues and enjoy food together, for hours if necessary. Food is ingrained in the French culture like many other cultures but it's been elevated to an art form for centuries now, that's why it is called cuisine.
That said, I love Italian, Japanese, Vietnamese and Thai cuisines.
