it's called oxidization. happens to apples too. lemon juice stops it!

I have read (but never tried) that if you put your banana's in the fridge, the skins will get black, but the banana will stay longer, than if they were left on the counter.

the bananas,apples are rich in iron
hence when they r exposed to air they turn brown thats it

Bananas turn brown when reacting with oxygen and the way to stop that is...............you wrap it in aluminum foil.
