Here is something I make. It is called apple buckle. It is really simple but appears complicated. I've gotten so many compliments whenever I've made it. My family loves it. In fact, I made it recently after a trip to the apple orchard.
APPLE-PECAN BUCKLE
Streusel: 1 1/4 c. pecan halves
1/2 cup all purpose flour
1/2 cup brown sugar
1/2 stick butter--cut into small pieces
2 1/2 tsp ground cinnamon
Batter: 1 stick butter
1 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1 large egg
1 Tbsp vanilla
2 1/4 cups flour
1 cup milk
1 1/2 lb apples (about 3) peeled, ocred and cut in 1/4 in. thick wedges (about 5 cups)
1. Heat over to 350. Spread pecans on baking sheet and put in oven for 8-10 minutes until lightly toasted. When cool, chop coarsely (or just buy the already chopped ones). Mix first four ingredients for streusel and then stir in pecans.
2. Increase oven to 375. Beat first 4 ingredients for batter in a bowl with a mixer. Beat in egg and vanilla. Add flour in 3 additions, alternately with milk, beating just to blend.
3. spread 2 cups of batter in prepared (sprayed with non-stick spray) 13x9 dish. Sprinkle with half of the streusel. Top with apple wedges. Dot with remaining 1 cup of batter (batter will spread during cooking). Sprinkle with rest of streusel.
4.bake for 40-45 minutes--put pan on wire rack to cool. Serve warm or at room temp--dust with confectioner's sugar before serving.

apple crisp
5 pounds McIntosh or Macoun apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
For the topping:
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced
Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval
baking dish.
Peel, core, and cut the apples into large wedges. Combine the apples
with the zests, juices, sugar, and spices. Pour into the dish.
To make the topping, combine the flour, sugars, salt, oatmeal, and
cold butter in the bowl of an electric mixer fitted with the paddle
attachment. Mix on low speed until the mixture is crumbly and the
butter is the size of peas. Scatter evenly over the apples.
Place the crisp on a sheet pan and bake for 1 hour until the top is
brown and the apples are bubbly. Serve warm

APPLE WALNUT SQUARES
1/2 cup butter, softened
1 cup sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1 medium tart apple, peeled and chopped
3/4 cup chopped walnuts
1. cream the butter and the sugar, add the egg. Combine the flour,baking powder, baking soda and cinnamon; gradually add to the creamed mixture, beating just until combined. Stir in the apple and walnuts. Pour into a greased 8 inch square baking dish.
2.Bake @ 350 degrees for 35-40 mins. or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 16 servings.

Baked apple pancake
Preheat oven to 400 degrees
Peel, core and thinly slice 2 apples. Mix with 1/2 cup of brown sugar, 1 tsp of cinnamon and 2 tbls of melted butter. Set aside.
Mix 1/2 cup of flour and 1/2 cup of milk with 1 egg and a dash of nutmeg and cinnamon.
Melt 2 tbls of butter in a pie plate, pour pancake batter mix into prepared pan. Top with apple mixture. Cook for 15-20 min.
Pancake will puff up in oven and fall once removed.
This is really yummy

IMPOSSIBLE APPLE PIE
3 cups sliced peeled all-purpose apples (3 large)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup Bisquick
1/2 cup sugar
1/2 cup milk
1 tablespoon margarine, butter or spread,* softened
2 eggs
Heat oven to 325?. Grease 9-inch pie plate. Stir together apples,
cinnamon and nutmeg; turn into pie plate. Stir remaining ingredients
except Streusel until blended. Pour into pie plate. Sprinkle with
Streusel. Bake 40 to 45 minutes or until knife inserted in
center comes out clean. Cool 5 minutes.
Cover and refrigerate any remaining pie.
Streusel
1/2 cup Bisquick
1/4 cup chopped nuts
1/4 cup packed brown sugar
2 tablespoons firm margarine, butter or spread
Stir together all ingredients until crumbly
Apple Dumplings
4-6 apples peeled and sliced 1 cup water
1 cup Bisquick 1 cup sugar
1/3 cup milk 1 tsp. cinnamon
Mix apples, Bisquick and milk. Place in greased baking dish. Bring
water, sugar and cinnamon to boil; pour over mixture. Bake for 25 minutes at 425 degrees

Apple Pancakes Recipe
CREPES:
1 cup flour
1 1/2 cups milk
4 eggs
1/4 cup apple juice
2 tablespoons sugar
1/2 grated golden delicious apple
FILLING:
5 golden delicious apples
1/3 cup raisins
1 1/2 tablespoons honey
Dash of cinnamon
1/4 cup apple juice
Crepes: In an electric mixer mix together flour, milk, eggs, apple juice, sugar, beat until smooth. Add apple. In a hot, non-stick, crepe pan heat 1 teaspoon butter or vegetable oil. Pour about 2 tablespoons batter into pan, spread batter evenly to cover entire surface. Cook until it browns around the edges, about 30 seconds. Flip it over with a spatula (or fingers) and cook until it starts to brown, another 30 seconds. Slide the crepe onto a plate and continue until all batter is used. Set aside.
Filling: Peel, core and dice apples. Gently simmer apples, raisins, honey, cinnamon and apple juice until apples are soft but not mushy. Using a potato masher break up the apple mixture to make the apple pieces smaller.
Spoon some sauce on a crepe and fold twice Dust with powdered sugar. Serve.
Honey Roasted Apple Sauce:
12 apples, Gravenstein or McIntosh
2 tablespoons butter
2 tablespoons fresh lemon juice
1/2 teaspoon finely ground sea salt, preferably gray salt
1/3 cup honey
Preheat oven to 425 degrees F.
Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks, place in a large bowl. Heat a large skillet or roasting pan over medium-high heat. Add the butter. When the butter begins to brown, add lemon juice, then add the apples and salt. Cook until the apples just begin to color, about 4 minutes. Stir in the honey. Roast the apples in the oven until soft and lightly caramelized, about 12 minutes. Fork mash for a chunky version or puree in food processor for a smoother sauce.
Serve warm, room temperature or cold.
Apple Crumble
1 tub (8 oz.) Cream Cheese Spread
64 NILLA Wafers, crushed (about 2-2/3 cups)
8 small apples, peeled, chopped
1/4 cup sugar
4 tsp. ground cinnamon
PREHEAT oven to 400°F. Mix cream cheese spread and crushed wafers with fork until mixture resembles coarse crumbs. (Do not overmix.)
TOSS apples with sugar and cinnamon until evenly coated. Spoon evenly into 8 (4-oz.) custard cups or a 1-1/2 qt. casserole dish; sprinkle with the crumb mixture.
BAKE 15 to 20 min. or until crumb mixture is lightly browned and fruit is tender. Serve warm. Top with walnuts or pecans(optional).Store leftover dessert in refrigerator.
