The whole fast food industry is in a fix. If trans fats are outlawed, they are essentially out of business. The ability of a fat to resist oxidation is given a number (AOM). A good frying fat should have an AOM of at least 100. Unhydrogenated fats, with the exception of beef tallow, have AOM's of around 10. These fats would decompose and be unusable in a very short time under typical frying conditions and would require frequent changes of the frying fat. Only those operators with a high turnover rate i.e. heavy users would be able to survive. Suppose you are frying pre-blanched french fried potatoes that have been fried in the same frying fat that is used in the restaurant, the amount of fat that you need to add to maintain the cooking level is very low. On the other hand if you are frying something like donuts that soak up a lot of fat, you have to add lots of fat to make up for the fat that leaves with the donuts. You can extend frying fat life by lowering the frying temperature and increasing the time.. So you can see the rocky road ahead for the restaurant owner.

Initally they said they would not change. However as most restaurants and fast food places are changing, they will also, early next year. Don't know why it will take so long.
