Try this, I am sure he will enjoy it.
Cod Milanese.
4 fish fillets
1 small onion, finely chopped
2 tablespoons lemon juice
third of a cup of oil ( I use olive oil but it doesn't matter )
salt, black pepper
Remove skin from fish.
Combine all other ingredients, place in a shallow dish, add fish and allow to marinate for 1 hour, turning occasionally.
Just before the fish is ready, make the batter - I promise you this is superb.
2 egg yolks
4oz flour
lemon zest
good glug of olive oil
250ml of ice cold sparkling water
Place flour in a bowl, add egg, lemon zest and olive oil and mix together. Stir in the sparkling water.
Dip the fish in seasoned flour, dip in the batter. coating well and fry gently in 1 tablespoon of olive oil and 2oz butter for about 3 minutes per side.
The secret is not to tell your friend how you have done this until he has eaten it.
When I first met my husband he never eat any real food, saying he didn't like garlic, olive oil, etc, etc, I introduced everything to him without telling him, there wasn't one thing he didn't like that I made and now he eats everything and wouldn't have junk food if it was going free ! If you don't want to be in the kitchen all day...do a one-pot meal. Either a casserole that you can pop in the oven, take out and serve. Or a crock pot meal...same idea. There are just tons of recipes. Take a look at what you have on hand: meats, tuna, noodles, pastas, rice, veggies, sauces, soups and make something from what you have on hand. Buy a good loaf of bread or pop some frozen rolls or biscuits in the oven just before you are going to serve dinner....add a nice salad made before hand......maybe add a simple dessert (even if it's only ice cream you can dish out) and you've got a nice satisfying dinner.

ok there are a few options there. roast turkey breast with roast potatoes and some veg; same with the roast beef only add yorkshire pudding, that's not fancy! beef mince either home made burgers which are totally basic so he can't complain or shepherds pie, nothing exciting there! i cook a good meal every night for my hubby and daughter, mostly traditional kinda foods so even tho i'm a veggie i'm kinda an expert!
as for the cod i can only suggest battering it because i have no clue when it comes to fish!

Youre Lucky, mine only likes things like sausage and mash, salads, chips. I wish I could go back to spag bol & macaroni cheese, chilli etc., I would rather go without a lot of the time than cook 2 different dinners after a day's work! Oh I forgot to say he doesnt like foreign, spicy or food with many herbs!

ok, make turkey balls, a bit different but still simple food, chop an onion, chop turkey, a bit of salt chuck it in processor and mash it up. In a pan fry a chopped onion, add tin tomatoes, stir, wet your hands and make turkey mixture into little balls, put into sauce pan, turn balls till cooked on outside and then simmer for 20 mins, serve with rice ir pasta, you can spice it up with garlic or herbs or chilli powder if you dare!!!

If he is so limited in his taste, get him to suggest something, or else tell him what you are cooking for you and he can try otherwise hand him the phone and take away menu. Life is way to short to spend if pandering to someone who is not prepared to experiment a little!

How about a fish pie, use your cod and chuck in some prawns to make it a bit fancier. Top off with creamy mash tatties with some cheese on top. Yum!
