Ingredients
Paneer - 250 gms
Thick Curd - 1/2 cup (tied in cloth for 2 hours)
Ginger - 1" (grated)
Garlic - 1/2 (crushed)
Red Chilli Powder - 1 tsp
Tandoori Masala - 1/2 tsp
Chaat Masala - 1/2 tsp
Sugar - 1/2 tsp
Cumin Seeds - 1/2 tsp (crushed)
Capsicum, Onion, Tomato, Carrot juliennes - 1 tbsp each (long thin strips)
Coriander - 1/2 tbsp (finely chopped)
Butter - 1 tbsp
Method
Cut paneer into 1/2" horizontal slabs.
Mix the red chilli, salt, sugar, cumin, tandoori masala, half the ginger-garlic and chopped coriander in the curd. Mix well.
Brush the slabs of paneer liberally with this dip on both sides and edges.
Marinate for 30 minutes.
Place in refrigerator till required.
Before serving, heat a non-stick pan.
Add butter and place slices to sizzle till light brown.
Flip and repeat for other side.
Cut into bite size square and arrange in serving dish.
Add remaining butter to pan, heat.
Add julinned vegetables, chaat masala and salt to taste.
Pour over the tikka paneer.
Instant method
Ingredients:
Paneer 1/2 kg (cut in cubes)
Capsicum 2 (chopped in big pieces)
Onion 2 (chopped in big pieces)
Garlic Flakes 3-4 crushed for to get 1/2 tsp. juice
Curd 2 tsp.
Cream 2 tsp.
Turmeric Powder 1/2 tsp.
Carom ("ajwain") one pinch
Salt according to taste
Method:
1. Mix all ingredients. Leave aside for 20 minutes.
2. Cook in microwave for 3 minutes.
Garnish with onion rings and serve hot.
Ingredients:
1. 5 tsp. lemon juice
2. 1 tsp. grated ginger
3. 2 garlic cloves, crushed
4. 2 green chili, chopped
5. 3 tbsp. chopped coriander
6. 1 tsp. chili powder
7. salt to taste
8. 250g paneer cut into cubes.
9. 2 tbsp. vegetable oil
10. 2 onions, chopped in 1-inch long thin slices
11. ¼ tsp. turmeric powder
12. 3-4 tbsp. thick yogurt
13. ½ cup milk.
For Garnishing:
Some chopped coriander.

1. Mix together lemon juice, ginger, garlic, green chili, half of the coriander, chili powder, salt, and paneer in a bowl . Cover and leave to marinate for an hour.
2. Heat oil in a pan and cook onions for 3-4 minutes on low flame till transparent. Add turmeric powder, yogurt, milk and the remaining coriander. Stir for a few minutes till the sauce thickens.
3. Add the paneer mixture in the sauce and cook for 5 minutes on medium flame. Adjust the seasoning.
4. Serve hot garnished with fresh coriander with your choice of Indian bread or rice.

Paneer Tikka Masala
For Paneer tikka:
Paneer pieces 1 lb
Tandoori color a pinch
For gravy:
Tomatoes (medium size) 3 nos.
Onion (medium size) 3 nos.
Poppy seeds 2 tsp.
Cloves 4 nos.
Cinnamon a small piece
Cardamom 4 nos.
Cashew nuts 2 tbsp.
Kasuri methi 2 tsp.
Chili powder 1 tsp.
Turmeric powder 1/2 tsp.
Coriander powder 2 tsp.
Cumin powder 1 tsp.
Sugar 1 tsp.
Cooking oil 4 tbsp.
Malai 3 – 4 tbsp.
Salt to taste
Add chili powder, garam masala powder, ginger garlic paste, tandoori color, salt to curd and mix well.Add chopped paneer pieces. Keep it aside for about an hour. Heat oil in a pan. Fry the paneer masala till paneer turns golden brown. The tikka is ready.
For gravy:
Grind onions to a paste consistency. Blanch the tomatoes and grind it. Mix turmeric powder, chilly powder, coriander powder and cumin powder with water. Grind poppy seeds and cashew nuts.
Heat oil in a pan. Add sugar. Add cloves, cinnamon and cardamom when sugar turns golden brown.
Add onion paste and fry well. Add the ground masala and fry for a minute. Add kasuri methi and fry for ½ a minute. Add tomato and fry till the gravy becomes thick and till oil separates from it.Add paneer tikka and salt. Cook for five minutes. Add malai if desired.

To make paneer tikka, make a marinade of beaten curds, salt, chilli powder, amchur powder and kasuri methi. Keep aside for 10 mts, then dip paneer pieces in the mix. Grease pan/ plate in microwave and arrange the pieces and cook for 5 mts @ 70% power with grill option. After 5 mts, turn the paneer pieces and let stand for 2-3 mts. Yummy paneer tikka is ready.

A small pot of yoghurt
Juice of 1 lemon
Red chilli powder

Method:
Cut the Paneer into 1/2 inch cubes. Mix the yoghurt, lemon juice, ginger garlic paste, chilli and salt. Mix the Paneer pieces with the yoghurt carefully to coat them evenly. Keep aside for 30 minutes in a refrigerator.
Cut Pepper into long pieces. Cut the tomatoes and onions into thick slices.
Skewer the vegetable and Paneer pieces and grill for about ten minutes.

Paneer Tikka

Serves / Makes : 6
Ingredients
500 gms Paneer
2 big green bell peppers
2 big onions
4 tsp oil
juice of 2 lemons
2 tsp red chilli sauce
1 tsp soy sauce
2 tsp tomato ketchup
1 tsp pav bhaji masala
1 tsp chat masala
1 tsp amchoor powder
1 tsp salt or according to the taste
1/2 tea spoon of red food colour(optional)
1 tsp turmeric powder
1 tsp red chilli powder
Method
1. Cut paneer, bell peppers and onion in 1 inch squares.
2. In a baking tray, mix all the other ingredients with the cubes of paneer, onion and bell peppers ...so that all the cubes are properly coated with the mixture.
3. Leave it to marinate for atleast 1 hour and upto 5 hrs depending on the time you have.
4. Pre heat the oven at 350F and bake the cubes for 30 mins checking ocassionally.
5. Remove and Serve hot on a serving platter.Add more lemon juice if required.
6. Garnish with finely chopped green onions.

Hariyali Paneer Tikka
Ingredients
Paneer 400gms
Curd 1cup
Coriander -2bunch
Mint 1bunch
Green chilies 4 to 6
Garlic 30gm
Ginger Paste 1tsp
Grounded garam masala 1tsp
Chat masala 1tsp
Salt To taste
Oil 1tbsp
Juice of two lemons
Method
Put coriander leaves, mint leaves,green chillies,garlic, ginger paste &lemon juice in a mixer & grind it to a paste.
Cut Paneer in big slices.
To the grinned mixture add curd, salt, garam masala powder, chat masala powder oil.
Marinate Paneer in this mixture for half an hour.
You can cook it in tandoor, or put little oil in a pan & cook it on high flame, or heat oven to maximum heat & cook for ten minutes.
Garnish with onion rings & serve hot.

Slice the paneer into cubes. Make a marinade (paste) of ginger, garlic, onions, green chillies, salt, pinch of turmeric powder, jeera, dhania and red chilli powder and hung curd. Dip the paneer cubes in this marinade and keep aside for atleast 45 minutes. Now heat oil, take a paneer cube with generous amounts of marinade , coat lightly in a bater (of besan or cornflour) and deep fry in oil. Your paneer tikka is ready.
Some people do not like to coat in batter and prefer to saute in a frying pan with minimum oil. This is my variation. Hope you like it
