Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.
Easy Eggless Chocolate Cake

1 1/2 cups cake flour
1 cup white sugar

3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 8 x 8 inch square pan.
Sift the flour, sugar, 3 tablespoons cocoa, baking powder, baking soda and salt together. Make a well in the center and add the water, oil, vinegar and vanilla. Beat until smooth and pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes.
To Make Frosting: Combine the 1/2 cup cocoa powder, sweetened condensed milk and butter in the top half of a double boiler and cook until thick. Spread warm mixture over the top of a slightly cooled cake.

Eggless Chocolate sponge cake:
1/2 tin condensed milk (200gms)
40 gm cocoa
2 3/4 cups plain flour (240gms)
1 tsp baking powder
1/2 tsp baking soda (soda bicarb)
2 tsp icing sugar
1/2 cup butter melted (60gms)
1/2 tsp vanilla essence
100 ml milk
1. Sieve flour, baking powder, baking soda, sugar, cocoa all together 2 to 3 times. Keep aside. 2. Pour condensed milk in a bowl. Add the butter, and beat well till smooth. Add the flour spoon by spoon, mixing into the condensed milk mixture. In between, add milk as required if the butter begins to get too stiff. 3. Once all the flour is used up, beat the batter as above till light (5-7 minutes). 4. Add the coke or Thums Up and mix gently till smooth. 5. Pour into a greased cake tin. Do not smooth with a spoon etc. If the consistency is right this will not be needed. 6. Pre-heat over to 300o c. Place tin inside. Bake at 200o c for 5-7 minutes and 150o c till done. (35 to 40 minutes). 7. Poke with a skewer and check. Cool a little. Invert on wire rack. Cool completely before doing icing if any.
1. Stir the mixture in one direction only all the while. This will incorporate more air and make the cake lighter. 2. Saty's fresh for a week if refrigerated.

Chocolate Cake
Materials needed
1 1/3 cup Maida
1 cup beaten Fresh Curd
1 cup Fine Sugar
1/2 cup Oil
3 tbsp Cocoa powder
1 tsp Baking powder
1 tsp Baking Soda
Few drops Vanilla Essence
Pinch of Salt
Chopped Walnuts
Melted Butter and flour for greasing
Directions
1.Sieve the Maida, salt, baking powder, soda and cocoa powder.
2.In another bowl beat the curd and add sugar to it. Keep on mixing. Pour the oil and mix it well. Then add the essence, with walnuts on top. To this batter add the sieved mixture slowly and mix it thoroughly.
3.Preheat the greased baking pan at 180 degrees for few min. Put the batter in it and bake the cake for 35 min

2. Cream the butter or margarine till light and fluffy. Beat in the condensed milk. Combine the flour, cocoa powder, baking powder, and baking soda; mix into the creamed mixture alternately with the cola.
3. Bake for 45 minutes, or until the cake tests done

QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

2 tsp. soda
1 tsp. salt
1/2 cup cocoa
2 cups cold coffee
1 cup vegetable or corn oil
2 tbsp. vinegar
1 tbsp. vanilla
Sift together flour, sugar, soda, salt, and cocoa.
Add coffee, oil, vinegar, and vanilla and beat until smooth using an electric mixer.
Bake in greased and floured 9 x 13 pan at 350 degrees for 40 minutes or until tests done.
As soon as cake is out of oven, cover it with the following icing.
CHOCOLATE ICING
1/3 cup soft margarine or butter
3 cups sifted powdered sugar
3 squares unsweetened chocolate, melted
3 tbsp. cream or evaporated milk, or plain milk
1 1/2 tsp. vanilla
Mix margarine and sifted powdered sugar until smooth.
Stir in melted chocolate cream or milk and vanilla, adding a bit more milk if necessary.
You could substitute cocoa for chocolate if needed
3 cups flour
2 cup sugar
1/2 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 cups water
1 cup oil
2 tbsp vinegar
2 tsp vanilla
Mix dry ingredients together. Mix wet ingredients together. Mix all together in large bowl. Pour into greased 8-inch round pan [use paper circle on base of tin].
Bake at 350 degrees F for 30 minutes. Cool in tin for 10 minutes. Invert, remove paper, face right way up, and cool on rack. Cake is fragile when hot - more robust as it cools.
Variations:
* add 2-4 tsp coffee powder to water
* use milk for part of the water
* use flavoured extracts for vanilla eg orange [jaffa], peppermint
