Hell has a special place waiting for you, man, but you could tell her you are the agnostic just searching for something to believe in. And you believe in her. Oh gosh, that's sappy. But who knows? Maybe she's as gullible as you are sly.

You should be a little more honest. If it is the church that she is interested in forget her. If it is you, then the church is just a cover. She probably knows you aren't part of the church and that is why she is asking, if not don't lie anymore. If she is that hung up on the church thing she won't be much fun anyway.

say youre an usher, that way youre serving in a physical capacity, but she won't be able to "quiz" you scripturally like she would if you were a deacon or something.
and if she's a die hard Christian, she'll be even less likely to sleep with you than you realize... she might make you marry her.
