The potatoe is a root and therefore is essential to drawing water from the ground for the survival of the plant. They don't do well in droughts.
Coconuts are tropical trees acclimated to heat and drought. That's why the coconut holds its moisture inside a tough shell. So the seed can germinate in drier weather.
