1 pound ground beef
3/4 cup cooked rice
1 tablespoon brown sugar
3/4 cup chopped onion
1 tablespoon ketchup
1/2 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

3 slices leftover bread (heels are great), torn into bite-size pieces

In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.
Cool for 15 to 20 minutes before cutting.

You really don't need the eggs. If its a basic recipe that doesn't have a lot of bread in it it should be fine. Here is one to try: 1 lb ground beef 1/4 cup ketchup 1/2 packet french onion soup mix 3 slices of leftover bread, torn to small bits (use heels if you got them) 1 teaspoon of Italian seasoning salt and pepper to taste 2 tablespoons of water Mix all ingredients except beef in a bowl and let sit for 5 minutes. Add the beef and mix well. Shape into a loaf in a baking dish or press into a 9x5 loaf pan. Cook at 400 for one hour approx. Baste with additional ketchup if desired.

I don't use eggs in my meatloaf recipe. Try this one.
1 lb lean ground beef
1/2 cup of bread crumbs
1 Tbs of BBQ sauce
1 Tbs Lea & Perrins
1 chopped onion
1 clove garlic
some italian seasoning
Mix all ingredients together and put in baking pan in preheated oven (300). Bake for 35 minutes.
I sometimes put mushroom soup or gravy on the loaf for the last ten minutes of baking to give it a little extra flavor. Hope you like it!!

Eggless Meatloaf
List of Ingredients
3/4C. plain dry bread crumbs
3/4C. skim milk or water
1-1/2 lb meatloaf mixture
(ground pork, veal or pork-veal-beef )
1 - 2 grated onions
1 medium-sized peeled, grated, raw potato
salt, pepper
a pinch of marjoram
1 crushed clove garlic or 1 t garlic powder
1 C water
Recipe
In a large bowl, mix bread crumbs and milk or water. Add meatloaf mixture. Add grated onions and raw potato. (The grated potato replaces the egg as a binder.) Mix well by hand until thoroughly blended. Season to taste with salt, pepper, marjoram and crushed garlic or garlic powder. Mix well, shape into a loaf and place in the center of a cake pan greased with oil. Add water to pan and bake about 1 hr in pre-heated 350° oven.

I've done eggless meatloaf, I just used Parmesan cheese and tomato sauce to mix the meats together. Sorry I don't have a recipe for you I usually cook by sight and smell.

You could probably go to a recipe site and see what you could substitute for any egg..possibly a little water with the bread crumbs instead..I think it's the bread crumbs that actually hold it together along with the eggs.. Or how about the powdered eggs or "Egg beaters"

The egg doesn't really affect the taste. It is in meatloaf to help hold it together so it and be sliced without crumbling.
