I can't believe no one has suggested salad yet! So many possibilities with salad! You can even buy the ones with a mix and maybe bring in some garlic bread or fancy crackers.
How about some mini sandwiches (tea sandwiches). Your local restaurants may have a dessert or party tray of some sort you can choose from (like enchiladas).
If you don't have time, try buying a tray at your local grocery, perhaps sushi?
I know you said you don't want to bake, but cornbread is like the easiest (and most fool proof) thing to make and you don't have to worry about it's temperature when transporting it. Plus, you can add anything you want to it (my favorite: jalapeno and cheese).

Just in case you change your mind about the baking thing...
ZUCCHINI PIE
1 tube (8 ounces) crescent rolls
3 medium zucchini, thinly sliced
1 gaqrlic clove, minced
2 tbsp butter
2 teasp.minced fresh parsley
1 teaspoon snipped fresh dill
1/4 teaspoon salt
1/4 teasp. pepper
1 cup (4 oz) Shreeded Montery Jack cheese, divided
2 eggs, lightly beaten
1. Seperate the crescent dough into eight triangles; place in a greased pie plate w/points toward the center. Press onto the bottom and up the sides of plate to form a crust; seal perforations.
2. In a skillet saute zucchini and garlic in butter. Add the parsley, dill, salt pepper and 1/2 cup cheese.
3. Spoon into the crust. Pour eggs over top; sprinkle with remaining cheese. Cover edges loosely with foil.
4. Bake at 375 for 25-30 minutes or until a knife inserted near the center comes out clean. let the pie stand for 5 minute4s before cutting.

Make a pasta salad. It's easy.
Buy 2, 12 ounce boxes of the colored rotini noodles.
2 Bottles of Robusto Italian Dressing
Onions, tomatoes,and cucumbers
Cook noodles, drain, cut up tomatoes, cucumber and onions, toss them with noodles, then add the Italian dressing and maybe a little seasoned salt and pepper. Then chill in frig overnight. It's very good.

Pumpkin Dip
INGREDIENTS:
1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar
1 (15 ounce) can solid pack pumpkin
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice
1 teaspoon frozen orange juice concentrate
DIRECTIONS:
1.In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill until serving.
Serve with graham cracker sticks or apples. Yum. A fall treat!

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Mild Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours.

here is a really quick and easy one for you
one package jello any flavour ( orange or red is best)
Disolve the jello in one cup boiling water
Instead of the one cup cold water add one cup vanilla ice cream, stir until disolved (can be poured in to clear plastic disposible cups for the office) refridgerate about half and hour . young and old alike love this and it takes two minutes to make .use as many packages of jello as you need for the office and just double the recipe or tripple

HUMMUS!!!
Garbanzo beans
Tahini (sesame seed paste)
Garlic cloves, fresh or sauteed in olive oil
Olive Oil
Lemon juice
Cumin
Paprika
Ground Coriander
Salt
Chili Powder (optional)
1/6-1/4 of a canned roasted red pepper (two-three slices)
garbanzo bean water reserved, to get to desired consistency
BLEND TOGETHER!!!!, and serve with pita triangles, homemade bread, or french/italian/sourdough bread from the deli area of your supermarket.
You can spice it up with crushed red pepper, and allow it to sit overnight or a day or two in the fridge to help the spices diffuse into the dip ^_^
it's uncooked...just blend with a food processor or Vitamixer, or one of those handheld shake-blenders (not an egg beating device or anything, you need something with power!)

I bring a taco dip salad. it's so easy to make.
One container of sour cream with one packet of taco seasoning.
Add in layers,salsa, cheese, lettuce and tomatoes and any other "taco" ingrediants to you liking.
Bring a bag of taco chips are you are all set! You can buy lettuce already shredded to make it super easy!!
It's super easy to make! Store your lettuce and tomato in zip lock bags and add right before you serve.....( gets very watery if you put on earlier).
