Crab Salad with Tomato Aioli

Ingredients:

For Aioli

1 tsp. garlic, chopped
juice of ½ lemon
2 tbsp. crushed canned tomatoes
1 tomato, roughly chopped
1.2 cup water
Salt and pepper

For Crab:

2 pounds crab
3/4 cup fresh peas
2 tbsp. rendered bacon
1 heaping tbsp. chopped basil
1 heaping tbsp. chopped mint
Juice of 1 lemon
3 tbsp. extra virgin olive oil
4 bunches mache

Procedure:

First, make the aioli. In a blender, mix the eggs, garlic, lemon juice and tomato product. Slowly add the olive oil in a steady stream. Finish the sauce with the water and season with salt and pepper. The sauce should be completely pureed and silky smooth. Pour the sauce onto two plates and reserve.

In a bowl, mix the crab, peas, bacon, basil, mint, lemon juice and olive oil. Be careful not to over mix and break up the crab meat. Place the crab salad on the aioli on the plates, garnish with mache.

Well, I'm not sure If crabs like salads,
But I would start by adding sea-foody tasting things,

If your crab seems sociable you could always just come out and say it....."Look Ive never made a crab a salad, what do you guys like In a salad"?

He wont think your stupid, he knows your ONLY HUMAN!

The easy way, which I rather enjoy, is one that I came up with.

2 Cups cooked cooled crab meat (make it all flaky-like)
1 Cup diced celery
1/4 Cup chopped green or red bell pepper
1 Teaspoon salt (if you like it salty, add more)
1/4 Teaspoon Garlic Pepper
1 Tablespoon fresh lemon juice
3 Tablespoons Mayonnaise
1 Teaspoon Mustard
1/2 tsp Vinegar

I toss it with some Thousand Island dresssing and wait until the crab gets home from work, then serve it to him with the rest of his dinner. ;-)

Seriously, here's a good recipe for crab salad:

INGREDIENTS:

2 cups cooked cooled crab meat, flaked
1 cup diced celery
1/4 cup chopped green or red bell pepper
1 teaspoon salt, or to taste
1/4 teaspoon pepper
1 tablespoon fresh lemon juice
3 tablespoons mayonnaise
mixed salad greens
6 avocado wedges, optional

PREPARATION:

Mix crab meat with diced celery, chopped bell pepper, salt, pepper, lemon juice, and mayonnaise. Serve over mixed greens with a slice of avocado, if desired.
