just mix every type of green vegetable inculding carrotts , onions cuecumbers,tomatoes,romaine lettuce,garlic,black olives,bell peppers ( green -red )celery,radishes and feta cheese toss with some redwine vingear and olive oil ( about 2-3 tbls each ) with some crushed course black pepper ///

Baby Spinach Salad with Tomato and Mozzarella

"Fresh herbs really bring out the flavor of this refreshing and satisfying salad."
Original recipe yield: 2 servings.

INGREDIENTS:
5 ounces baby spinach leaves
1 beefsteak tomato, cut thinly crosswise
1/2 cup fresh basil leaves, cut into thin strips
1/4 pound part-skim mozzarella, diced
2 teaspoons fresh oregano, chopped fine
2 tablespoons olive oil
2 teaspoons balsamic vinegar
kosher salt and ground black pepper to taste

DIRECTIONS:
Alternate layers of spinach and tomato across plate. Top with basil, mozzarella, and oregano. Dress with oil and vinegar. Season to taste with salt and pepper. Serve.

This recipe is optimal for Phase 1 of the South Beach Diet.

For a super easy salad, get a couple bags of ready to go greens (one iceberg lettuce, one darker mixed greens). Add dried cranberries or dried mixed fruit bits or raisins, candied walnuts, small flavored croutons, bacon bits, and grated cheese. Top with your favorite dressing! You'll have enough fruit/nuts/etc. to save for the next few salads, too. Eat the salad with Pillsbury breadsticks (the kind you pop the can open and bake).

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

caesar salad, grilled chicken salad. italian pasta salad-this has fresh mushrooms, black olives, green olives, green onion, purple onion, red and green pepper, mozzarella, cheddar, hot pepper cheese, chopped up pepperoni, first you have to boil those tri color noodles until tender, run cool water over them, then add ingredients, plus italian oil, toss, refrigerator for 3 hours, add parmesan and black pepper if desired, serve with italian buttered bread.

i like shredded lettuce with spinach ( probably wait till it's safe again because of the e coli thing though) and i like to top it with sugar or artificial sweetener (i don't fancy dressings)
