Take a large square of heavy duty aluminum foil and fold the sides up to make a package. Place a boneless chicken breast in the center and season well with whatever you're hungry for at the moment -- barbeque sauce, teryaki sauce, lemon pepper, dill butter, or whatever you fancy.
Place a quartered, peeled potato, a carrot cut into chunks, a few brocolli spears, and some slices of onion (if you like it )around the chicken. Dot the veggies with a little butter, salt, and pepper, then fold the foil up to make a tight package.
Bake at 350 degrees until the chicken is done and the veggies are cooked. (Usually about 25 to 30 minutes.) Serve with a deli salad of your choice and some warm garlic breadsticks.
It's good, easy, covers most of the food groups, and there's little clean-up.

OK, here's the best recipe so far. Get a package of 10" flour tortillas. (about 10 come in a pack). Keep them in the fridge for that quick meal anytime. Take one out, and coat one side with a light layer of olive oil. Now, look through the fridge for leftovers. Put whatever you have AND CHEESE onto the ungreased side and fold like a burrito. Put the fold down on a cookie sheet and put into a 450 degree oven. Cook for about 8-12 minutes until golden brown. Shell will be crisp and innerds will be hot! A little sour cream and MMMMMMMMMMMMMMMMMMMM....

I always keep some dried pasta and a jar of pasta sauce on hand for times like that. Add a sprinkle of parmesan cheese (the real stuff, if possible) and you have a decent mean in less than 20 minutes. To make it REALLY fast, get one of those electric kettles and heat the water in that. Put a little water in the bottom of your pot and turn the heat on - by the time it boils, the kettle is done. Dump it in the pot and you're ready to add the pasta. This way it only takes 5 minutes to bring 2 quarts of water to a boil, instead of 15 minutes.

My absolute favourite is so simple and really tasty. On the way home from work, buy some of your favourite pasta (mine is linguine) and a jar of good green pesto, and some fresh ciabatta or french bread. Boil the pasta for 8-10 minutes, drain, stir in a tablespoon of pesto or two, heat up again over heat for a few seconds and serve with fresh bread. No need to faff about - so comforting and so, so good!

I love just boiling half a cup of pasta in a saucepan for 6-9 mins then drain add a jar of tomato pasta sauce and if you like a tin of tuna or some meat (optional) heat and thats it
Also garlic bread is good I mix 1tsp garlic 1tbls butter 1tbls parmasan cheese spread on bread of choice and fry or grill
You can buy frozen meals or frozen fillets of fish or chicken which I sometimes cook in the microwave or fry them add soy onion mushrooms redpepper and green beans (most veggies u can get prepacked washed chopped or frozen) sometimes I add a pack of mintue noodles after cooked.
Before uni some mornings I add tub of yogurt, a banana, berries and milk for a quick smoothie or when really hungry and can wait for dinner

Pizza toast
Spread some pizza sauce on a slice of bread (any kind) add a lot of chedder cheese on top, put into a toaster oven to toast for 3 minutes or till the cheese melt. Quick and easy. After all, you only need to wash your hands and a spoon.

throw some instant rice& water inthe microwave to cook.
then in a skillet cook some salsa (obviously the kind of your choice)and chicken breast either cubed or in strips until the chicken is done (the smaller the peices the faster it cooks) remove from heat and add a little sour cream. the rice should be done by now then mix it all up and enjoy. it takes about 10-15 TOPS.

Spaghetti aio e oio
Note this uses only a few ingredients so they must be top quality.
Ingredients
200g top quality spaghetti or lingunini
5 Tbsp cold pressed olive oil (extra virgin)
1 clove garlic, finely chopped
1/2 tsp fresh or dried chilli, finely chopped
2 Tbsp top quality parmesan or grana padano cheese, grated
1 Tbsp parsely, finely chopped
Cook pasta in pot of boiling, heavily-salted water until cooked.
When pasta is almost ready, heat oil, garlic and chilli in a saucepan until it is fragrant but not burned.
Drain pasta, put back into pot and toss with oil, garlic and chilli.
Transfer to your bowl and toss with cheese and parsley.
Enjoy.

Grilled cheese is always a good one. I like using rye bread and swiss cheese. Either that or some good soup.
