Corn Cakes

INGREDIENTS:
2 cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
2 well beaten eggs
1 can (approx. 15 ounces) cream-style corn
2 cups milk
1/4 cup melted butter
PREPARATION:
Combine dry ingredients in mixing bowl. Combine eggs, cream-style corn, milk and melted butter. Stir into dry ingredients, mixing lightly. Bake on lightly greased griddle or in lightly greased skillet until golden brown, turning once.


Black Beans and Rice

2 15 oz. cans black beans, drained
1 c. onion, chopped
2 bay leaves
4 cloves garlic, minced
1 tbsp. cilantro
14 oz. can diced tomatoes (low sodium)
1/2 c. frozen corn niblets, thawed
1 c. hot cooked rice
1/4 c. jalapeño jack cheese, shredded
1/2 tsp. cumin
1/2 tsp. chili powder
red pepper flakes to taste (optional)
Directions:

Sauté 3/4 cup onions, garlic, and bay leaves in oil.
Add black beans, cilantro, tomatoes, cumin, chili powder, red pepper flakes, and corn.
Simmer until heated through and flavors meld.
Make a mold of cooked rice on a platter.
Pour bean mixture over the rice.
Garnish with 1/4 cup chopped onions.
Sprinkle cheese over the beans.



Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

I think a delicious green salad with tons of things in it, is the best.
You have your meat and your tortilla already. You could cook up a sweet potato with it, and some corn, or some black beans or even a good 'tomatoes and cuke' salad or platter would be good.
Top it all off with mango sorbet or slices of watermelon.

With fajitas I usually serve a mixture of different colored bell peppers, corn and onions fried together in a skillet. And a side of refried beens.

No i don't think you need a side dish... Meringue is really easy to make... you need: 6 egg whites 180g caster sugar top with: Double cream Fruit ( strawberries, raspberries, blueberries, blackberries etc...) method: whisk the egg whites until frothy ( takes about 1 min with electric whisk) pour in sugar while whisking, and keep whisking untill it makes a cream like substance, spoon out onto baking tray with grease proof paper on, cook in oven until looks crispy white, leave too cool and top wiith double cream and fruit :)

well thats what all the good mexican resturants serve...but honestly..try it before you knock it...its a dip, filling and GOOOD.... Take a large stick of velveeta, rotel , hormel chili, 1lb ground beef.. First you will slice the velveeta and put it into a crock pot, start in the middle of the day and slow cook it or late in the day and med high.... Then brown the Ground beef and add that into the crockpot and stir occasionally, add rotel and hormel and when it's all done melting, eat with your choice of chips...you will not be dissappointed... Trust me!!

You dont necessaraly need a side with fajitas. They are meant to be eated alone. There is a meat, a grain, and a vegtable.

with fajitas always served any of the above, refried beans, beans salad, green salad, coleslaw, green beans salad, Cesar salad, guacamole, or slice tomatoes and onion with cheese balsamic vinegar and olive oil.

tortillas, beans, keep it simple so the fajitas will stand out as the main course though..
