The ONLY way I cook steak for me is blue rare
The cooking time is dependent on the thickness of the cut
Mind you the cuts youve mentioned are always better if marinated first or served with a sauce because they are not the tastiest cuts of beef.
The tastiest cuts are ones which are the tougher. They are the ones that you would not have as a steak. Cuts like, shin, chuck gravy beef. shoulder. These cuts are absolutely brilliant when stewed in seasoned stock or roasted slowly after seasoning with the right herbs and spices
You can make the most brilliant beef dishes with those cuts of beef. Everything from, Osso bucco, Beef Curry through to a Bolognaise to die for.

Medium Rare
Of the cuts mentioned, I would have to go with the porterhouse being my first choice, followed by the T-bone.
