Saliva has salt in it. Salt in wounds stings.

salty foods or foods that are spicy or with lots of acid will make the cut burn its because the open gum and nerves are exposed to air and the salt gets in there and stings

The skin in the mouth is much more sensitive than on the rest of your body. As the cut is trying to heal, when you eat or drink anything it gets more irritated.
