I have a pound of sundried tomatoes that someone gave me. Does anyone have any good recipes using them?

SUNDRIED TOMATO CHEESECAKE

CRUST-----
1 1/4 c Flour
6 ts Butter -- chilled -- in pieces
1 lg Egg
FILLING-----
3/4 c Oil-packed sundried tomatoes
(reserve oil)
5 Garlic cloves
3 ts Fresh basil -- or 1 tsp.
Dried
3 lg Eggs
16 oz Cream cheese -- at room temp
In pieces -- (2 8oz pks)
1 c Sour cream
1/2 c Green onions -- chopped

CRUST: Preheat oven to 350F. Blend ingredients for
crust in food processor until mixture is like coarse
meal. Add egg and mix until dough just holds together.
Press dough on bottom of 9x12 baking dish, bake until
golden, ca 10 min.

FILLING Mix tomatoes, one T reserved oil, garlic and
basil in food processor. Add cream cheese and eggs;
blend smooth. Add sour cream, blend until just mixed.
Transfer to a bowl, stir in green onions.

Pour filling over crust, bake about 20-25 min, or
until filling is puffed and golden brown. Cool to room
temperature. Cut in squares and serve. An instant

Chicken with Sundried Tomatoes

8 oz dry spaghetti
2 c chicken broth
1 lb asparagus -- cut into 2=D3 pieces
8 sun-dried tomatoes -- chopped
2 cloves garlic -- finely chopped
1 1/2 c chopped yellow bell pepper (1 1/2 medium)
1 medium red onion -- chopped
1 1/2 lb boneless skinless chicken breasts -- cut into 1/2=
=D3 strips
3/4 c fat-free ricotta cheese
1/3 c chopped fresh basil leaves
2 tbs reduced-fat sour cream
1/2 tsp salt
1/4 tsp pepper

1. Cook and drain spaghetti. While pasta is cooking, heat broth in 10=D3=
skillet over medium heat. Cook asparagus, tomatoes, garlic, bell pepper
and onion in broth 5 minutes. Stir in chicken. Cook 4-6 minutes, stirr
ing constantly, until asparagus is crisp-tender and chicken is no longer
pink in center.
2. Stir in spaghetti and remaining ingredients. Toss about 30 seconds o
r until heated through.

This is a really easy recipe-
Take a flour tortilla (freshest the better)
Cream Cheese
Sun dried tomatoes
Spread the cheese out on the tortilla, add the tomatoes, roll up tight and cut into 1/2 inch pieces. Enjoy....

Pasta Salad

2 cups sundried tomatoes, finely chopped
1 cup sliced or chopped black olives
1 cup cubed mozzarella cheese (small cubes)
1 cup shredded parmesan cheese
4 cups cooked pasta (conchiglie, spirals, etc.)
creamy Italian dressing (to desired consistency)
cracked pepper to taste
1/4 cup capers (optional)

Mix all together, chill and serve.

A full pound? WOW! Because they're practically dehydrated, they will last a while, so I'd suggest just keeping them and using them on an "as needed" basis. Put them on salads, any pasta meal, homemade pizza (or add them to a frozen pizza). You're well aware or their potent flavor, so I'd simply caution against using them any great quantity.

add them to pasta sauce, or make a spread out of them with garlic, parmesan cheese and olive oil in the blender.

I love them chopped up in creamcheese. Great on crackers or sandwiches. Add them to any pasta sauces.

yum- put them on a pizza and sprinkle basil, mozzarella cheese on top. may even want to use a pesto base. happy cooking!
