I want the authentic, restaurant-style stuff... but the bread i use doesn't seem to work...

Ciabatta Bread is the one I see in almost every recipe.

There are several really good types on the market. Firm, artisan bread with crusts are recommended. I suggest going to your good local supermarket that has a deli, and ask them to show you what they typically use and some options. You might discover some real treasures. Don't use the soft stuff, whatever you do! Have fun!

I would use a nice crusty bread like ciabata or any other artisan crusty loaf of bread you slice yourself

at home the fail proof bread is Foccacia and you get to pick your flavor to boot.
