Swiss over brocolli is great, as is parmesan over zuccini, tomatoes, eggplant

My favourite is Parmesan cheese, but if you wanna try something a bit different try using a good quantity of chopped Italian mozzarella. It's gonna melt but has a completely different consistency then any hard cheese; in Italy they use it for a number of vegetable dishes.
