you must have to many you can but it would be only good for borscht...blance it before freezing....i would slice them and and they could be cooked the reason i said could only be used for soup is that you have to blance fresh veggies to freeze and shreeded would not come out to good...

Don't grate to freeze it it costs electricity store it in a box of sharp sand or peat and it will keep till next season then you can use at your leisure and grate or cook it fresh

why not put it through a juicer and freeze it as a stock you will then keep most of its vitimins
