Cheddar Macaroni Salad
Yield: 1 Salad

Ingredients

3 c medium shell macaroni
2 c cubed cheddar cheese
1 c chopped celery
1/2 c chopped green pepper
1/4 c chopped onion
1 c dairy sour cream
1 c mayonnaise or salad dressing
1/4 c milk
1/2 c sweet pickle relish
4 ts vinegar
1 1/2 ts prepared mustard
3/4 ts salt

Instructions

In a large kettle cook macaroni in a large amount of boiling salted
water until tender; drain. Cool to room temperature. Toss with
cheese, celery, green pepper and onion.

Combine sour cream, mayonnaise or salad dressing, and milk; stir in
relish, vinegar, mustard and salt. Toss with macaroni mixture.

Cover and chill for several hours.

Serve in a lettuce lined bowl. Garnish with green pepper rings if
desired.

I'd use sour cream or plain yogurt, replacing any mayo in a recipe but perhaps better leave out any vinegar called for. Those might be a little too thick but could be thinned with a bit of milk or even water. You can get some very different salads out of macaroni and other pastas by varying seasonings and ingredients. If you like a smoky taste, look for smoked paprika as a seasoning. You can use ham, salmon, tuna, any cheese you happen to like, just about any vegetable. Tomato, peas, green beans, olives, cucumber, snow peas, onion, garlic, celery, chick peas or any other bean, peppers red or green.

This may sound gross, but it's really delicious! 1 pound cold pasta, 1 can drained tuna, a few tablespoons of minced onion, 1 tablespoon dry mustard, 1 stalk chopped celery, and mayo (maybe 1 cup, more or less), salt, pepper and if you want, some cayenne pepper....yummy...we call it "TUNA WIGGLE"!

If you like tomatoes and cucumbers this is great! Cook your macaroni, drain and put into a bowl. Cut up tomatoes and cucumbers and add to the macaroni. Mix with Miracle Whip and chill. GooooooooD!

You can add more mayo if you like. When I make mine, along with mayo, mac, salt & pepper, I like to add black olives, celery, green onion & a small bit of shreaded carrots.

i always put more mayo in it and stir it up, it will look like too much mayo, but when you chill it in the refrig... the mayo absorbs in the pasta and dries up a little so that is why i put alot in it at first

You probably need more mayo and more spices/salt if yours is blah and dry.

Add boiled eggs, pickle relish, onion, garlic, powdered mustard (slightly spicy)...maybe red pepper (cayenne pepper). I sometimes put canned tuna in mine, too.

Try miracle whip instead of mayonaise. It is the difference in all of my salads.
