Its such an arrogant view to assume that humans have souls but animals don't when a) we're decended from them, b)many have similar brain structure to us, c)it has been shown that animals can have feelings, and also that they can cooperate in societies etc. a basic form of morality.
That leaves 2 alternatives both of which are much better 1) Both animals and humans have souls 2) Neither animals, nor humans have souls because souls don't exist (my personal opinion).

If each atom has a soul, then a mouse would have something like 10^23 souls.

When my cat runs into my bedroom cause she knows I'm there, jumps on the bed and lies down next to me, and wraps her little paws around my leg and looks at me with those incredibly loving eyes, then I KNOW that there's a soul inside that little ball of fur, and that she loves me, how could a soulless thing show me so much love? I've had enough pets like that to be convinced that animals do have a soul.

sort of, though not like humans do, exactly. its kinda a grey area between spirits and souls.... (souls are made of spirit energy, some "spirits" are little more than simply things that have spirit energy in them, souls are like a super-high density spirit energy specially formed....)
so yes and no.
and it depends on what animals you mean.
and it doesn't have to have a soul for it to have things to teach, in the sense that that quote refers to.

Yes, animals have spirits, but they are less advanced than ours. Our spirits are called souls.

Last time I checked, humans were considered part of Kingdom Animalia. If animals don't have souls, then humans don't have souls.
