An Italian appetizer:
2 rolls crescent rolls
1/2 lb salami
1/2 lb provolone
1/2 lb ham
lg. jar roasted red peppers
7 eggs
layer 1 roll of crescent rolls (pinch seams together) in a greased 13 x 9 pan with 1/2 of the salami, cheese, ham, peppers and 3 eggs beaten.
Repeat layers of meat and cheese and peppers and eggs top w/ last roll of crescent rolls.
Lastly beat last egg and brush on top, cover cook 350 for 30 min. covered, then uncover and cook another 30 min.
Cut in like 1" squares - good little bites to eat. Oh, let cool completely.

* Using palm of hand flatten chicken to even thickness. Dip chicken into egg then into crumbs to coat. In skillet over medium heat, in hot margarine, brown chicken on both sides. Add sauce. Reduce heat. Cover; simmer 10 minutes. Sprinkle with cheeses and parsley. Cover; simmer 5 minutes or until cheese melts.
* Makes 4 servings.

Classic lovely Italian appetizer: Prosciutto & melon You can get Prociutto (it's a very nice dry-cured Italian ham) VERY thinly sliced at your deli counter in the grocery store (or there are packages you can buy). Just take a thin slice and wrap it around a small slice of cantaloupe. Yum! You can keep pieces together with toothpicks or they should be fine without too.

Get the Pasta boiling. Saute garlic in olive oil, pour in white wine. Open a can of clams, pour it in, water and all, add chopped parsely,
Strain the Pasta and cook it in the clam sauce, using the pasta water if it gets too dry. Serve with grated cheese (parmigiana is the best.)

Make pastry, remember half fat to plain flour, (i.e., 4oz Marg to 8oz P.Flour)
add water to form a dough, if not buy frozen pastry its OK to cheat.
roll out in a pizza tin, add any topping you like, serve with side salad.

pasta is not hard to make. you can add any sauce you want. add a salad and enjoy.
