Here's a really simple apple martini recipe:
1 part apple schnapps
1 part vodka
1 part apple juice
You can also fancy it up by serving it with a very thin apple slice. Sometimes I substitute sparkling apple cider for the juice (if you do this remember to shake the martini slowly, otherwise it'll overflow!). I made these for a party once and they were a huge hit.
Also, mimosas are simple and delicious. Just mix orange juice and champagne (parts depend on how strong you want your drink). A great champagne is Martini & Rossi's Asti. You can find it at most places that sell alcohol. Just make sure to get orange juice without pulp!

Well if it is for you make what you like and have a few alternatives. Wines, champagne and beers are always good calls. If it is for some one else find out what their favorite drink is and go with that, as well as soda and waters.

2 parts cranberry Juice
1 part grapefruit juice
1 part vodka
Shake it up and serve with a slice of lime! Yum!
White Wine (something good from Napa valley, depending on your tastes) Soft drinks, Ice Tea, Coffee.

Try to make a something fruity that most people would enjoy try bahama mamas - 2 parts white rum to 1 part malibuand 1 part banana liquor and then add pineapple juice and orange juice(equal parts) and splash in some grenadine to make it a red/orange color very easy to make very tasty you can set it up in a punch bowl with oranges and pineapple floating in it.

make a nice punch with a ice ring of fruit , but I would make a colorful fruit ring and lemonade(don't want stains on that lovely carpet, if you have wood floor, WHATEVER floats your boat
